I have a ton of food allergies... But I'm pre-op. so I will be curious to what responses you get.

Thanks for responding! When is your surgery? What are you allergic to? Maybe we can give each other ideas....I know I get stuck in a rut and tired of the same things! My allergies are wheat, gluten, soy, eggs, corn, bakers yeast, and sucralose (splenda)....oh, and chocolate is a migrane trigger so I avoid it too. I'm in a food rut right now and looking for ideas!

I just found out today that i was approved my insurance, waiting on the call back from the doc's office with the date.

OH. MY. YUMMY. CREAMY. GOODNESS!!!
That just about sums it up. Take 3 c whole milk and 1 c half and half with about 1/2tsp salt heat to 175, remove from heat and gently stir in 3 tbsp fresh lemon juice (will double check my recipe on that amount, going from memory) then let it sit for 5 min. Strain the whey off....takes me about 2 hrs for the consistency I like. Chill. Use just like store bought but you'll LOVE this sooo much more!! I only allow myself to have it once a day. Love it with some stevia and almond extract with strawberries and blueberries (thanks eggface!!) Or with pb2 or just with some stevia mixed in. I've never used it in savory dishes but I'm sure it would be great in those too!
