Crustless Cheeseburger quiche

I thought I had posted this before, but I couldn't find it today, so I'm posting it again.  Please excuse if it is a duplicate.

Crustless Cheeseburger Quiche

Ingredients:

  • 1 lb ground beef

  • 1 -2 teaspoons onion powder

  • 1/2 cup half and half

  • 1 cup plain Greek yogurt

  • 4 eggs, beaten

  • Garlic powder, to taste

  • pepper

  • 1 cup shredded cheddar cheese

Directions:

  1. Brown ground beef and onion powder in a large skillet over medium heat, drain off fat.

  2. Mix together eggs, half and half, yogurt, garlic powder, pepper and shredded cheddar cheese.

  3. Put browned beef into a 9 inch pie plate, pour remaining ingredients over the beef.

  4. Place in a preheated 350 degree oven and bake for 40-45 minutes.

Making this tonight after work!  Might add some scallions so it's got a wee bit of green.

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

I'm so glad to see you are still here.  I was quite active 2yrs ago and then life happened.  You don't know me,  but I used to follow your posts along with some of the other regs.  Great to see some of the same ppl.  Thanks for setting the example.

I'm so glad you are back.  So many people who were active when I started have disappeared, and I miss them and wonder how everyone is doing.  I hope you are doing well with your weight loss journey.  Please don't be a stranger here!

Carol, I made this yesterday while I was snowed in..It is sooooo good! Hubby even liked it and that's saying a lot! Thanks for still another great recipe..Keep posting!
