Here are two that pop around here.

BBQ Chicken

Coat skinless chicken thighs (or breasts) generously with BBQ sauce and bake covered with foil at 350 about an hour.  Some sauces can be really high in sugar, but I only actually eat a tiny amount anyhow...like a teaspoon or two over a couple of ounces of the meat.

40 Cloves and a Chicken

Very moist and yummy recipe.  Probably can cut the oil in half if no one is planning to eat garlic oil.  I like steamed broccoli with it.

ETA: Here is how to peel the garlic quickly.

And just remembered something I liked early out that I haven't done for a while...canned chicken breast mixed with wholly guacamole from one of the 100 calorie packs.  It is like a mini Mexican chicken salad, just mix and eat.

Hubby and I put a chicken breast in a plastic baggie with a few tbsp of lite Caesar salad dressing for a couple of hours one night and then cooked it in a skillet. It was delicious!
