Ripe Tomato Relish Recipe

1 Peck Ripe Tomatoes (approx. 13.5 lbs)
3 green Bell Peppers
3 Red Bell Peppers
9 onions (Medium)
1 Stalk Celery

Grind all above...Add 1 cup salt...Mix and let stand over night and DRAIN......

3 cups Vinegar
2 cups Sugar
1 cup Horseradish
3 tsp Cayenne Pepper

Do not cook!!!!!

Place in jars, water bath 10 minutes....

Makes approx...5 quarts


With regular sugar

1 tbl= serving
8.8 calories
3.2 mg sodium
2.2 carbs
0.2 fiber
1.5 gm sugar
0.1 gm protein

Sounds yummy but I DON'T can anything. I'd love it though. It sounds lots like what I cann chili sauce which when you buy it is sort of chunky catsup.

Barb is that canning salt or reg salt? Cider vinegar? and can i chop all ingredients together instead of grinding?

sorry it has taken so long to respond. Took my grandaughters camping and just returned home.

I use either canning salt or regulat table salt...no iodine....I also use distilled white vinegar. Yes, you can chop all the vegetables anyway you like. I just typed the way the recipe called for it. I hope you like it.
