Question:
Looking for the Armadillo Egg recipe
I receive weeekly emails of WLS recipies. Last week's email included a recipie for Armadillo Eggs. I deleted it by accident but would like to try it. It involved stuffing jalapeno's with cream cheese, encasing them in ground turkey or pork then rolling in cracker crumbs and cheese and baking them. I have a receipe that calls for a hard boiled egg in the middle instead of
the pepper. I think it's called scottish eggs. I will send this to you
and you can improvise if you want me to.

"Armadillo" Eggs
1 pkg Ground Turkey (or Pork)
2 tsp Sage
1 tsp Oregano
Salt and Pepper to taste
1 pkg low fat cream cheese
1 can/jar whole jalapenos
20-30 saltine crackers
2 cups shredded cheddar/monterey jack cheese mixture
Drain and rinse the jalapenos and then de-seed them by making a slice down
the side and carefully scooping out the seeds. Then stuff each pepper with
about 1/2 tsp of cream cheese.
Season the meat. Then form a ball around the stuffed jalapeno creating an
"egg shape".
In a ziploc back, crush the saltines to a fine consistency and then place
in a small dish. Roll your meat "eggs" in the cracker crumbs.
Finally, roll them in the shredded cheese and place in a baking dish.
Bake in a preheated 400 degree oven for about 25-30 minutes or until
browned. Make sure to periodically check on them to ensure they are
crisping up and no oozing!
These can be served whole or sliced down the middle. If desired, serve with
ranch or dipping sauce of your choice.

This recipe is from the Trail's End B&B in San Marcos, TX.
Scotch Eggs
These eggs may be prepared a day in advance and refrigerated until ready to
bake. They are rich so allow one per person.
1 egg, beaten
1 pound bulk sausage uncooked
4 hard boiled eggs, shelled
3/4 cup bread crumbs
Preheat oven to 375 degrees. Combine beaten egg and sausage. Divide the
mixture into 4 equal portions.
Mold each sausage portion around a shelled egg completely covering the egg.
Roll in the bread crumbs
until well coated. The eggs should have a well shaped, even covering of
sausage and bread crumbs.
Place in a baking pan and bake for 45 minutes. Serve hot. Serves 4
