Can I just say my southern ancestors were turning over in their Baked Macaroni & Cheese graves when I made this.  They tried to sit up when I let others try it too.  I must tell you ALL.  I may never make regular mac & cheese after this experiment.  The original recipe has be modied to below by ME...I swear you'll love it!!  PROMISE 12oz extra firm Tofu 2 cups shredded cheese 1/4 cup half & half 1/2 cup egg beaters Use a fork to crumble tofu, add remaining ingredients (reserving 1/4 cup cheese for the top).  Spread in pam sprayed 8x8 baking dish.  Top with remaining 1/4 cup cheese.  Baked 350 over for 30-40 minutes or until it is bubbly and lightly browned on the top.   Cut into 8 squares.

I just updated my wording, lol...cause I knew what I meant.  Use a fork to crumble up tofu =)
