Thanks to everyone for their suggestions on my protein brownies...

Are you sick of the brownies yet? Ok, so I made another batch (in the name of science you know...) and incorporated some of your suggestions and it turned out NUMMY!

Nik's Protein Brownies w/ Nuts

Dry ingredients:

5 scoops chocolate whey

1/3 c. unsweetened cocoa powder

2 tsp baking powder

1 tsp baking soda

Wet ingredients:

4 tbsp Blue Bonnet Light
1 extra Large Egg
1 c. Splenda
1/3 c. no sugar added applesauce
1 tsp pure vanilla extract

Addition: 2-3 oz. chopped peanuts

Directions:

1. Mix together margerine, egg, and applesauce until well mixed. Add vanilla extract and mix again.

2. In a separate bowl, mix together all dry ingredients well.

3. Pour dry ingredients into wet and mix, mix, mix!!!

4. Stir in chopped peanuts and mix more.

5. Pour into 13 x 9 baking pan (that has been sprayed with nonstick of course) and bake on 350 for about 10 minutes. Then turn off the oven and let them sit another 10 minutes.

 6. Remove from heat, allow to cool, and cut into desired amount of squares.

I need to run new stats for them with the nuts but this made a huge pan of MOIST, chocolatey brownies that were the appropriate level of sweetness (by my tastes and by my oldest daughter's who deemed the last batch not sweet enough).

cool. I'll try this one tonight if miss pukeface will stop for a few minutes> (my kids have passed a bug all weekend).

I don't do walnuts though so I'll leave those off.

peanuts Mandy...PEANUTS!!!

:) I am trying to figure out how to parlay this recipe into blackbottoms without sending it to carb hell. Right now they are holding strong at about 4g carbs per serving. Adding cream cheese to the mix might ruin the whole damn thing.

I used your original recipe earlier today - I haven't had one yet, but they look yummy.

I'm thinking of adding sugar-free marshmallows to the next batch.

I have a kind of chocolate protein powder that I don't really like (doesn't taste very chocolatey either). This may be a silly question, but do you think it's a bad idea to use that to make these, or is there some possibility that the other ingredients could cover up the taste somewhat? (Pre-surgery I did drink it, I think I just added chocolate extract though. Maybe that would work here?)
