PK's Banana Bread, with pics, stats and a plot twist!
First-- PKs recipe:
Ingredients:
1 cup splenda
1/3 cup soft margarine (I use 66% reduced fat margerine: 25 calories per 2 tsp)
3 extra large eggs, unbeaten
1 3/4 cups vanilla protein powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (I actually use 4 very ripe bananas which is a lil more than a cup)
Preheat your oven to 350ºF.
Mix the sugar, margarine, bananas, and eggs for 3 minutes. Sift protein powder, baking powder, baking soda, salt in a seperate bowl. Add dry mixture to the wet. Mix well.
Grease a bunt pan. Pour the batter into the pan and bake for 40min or until a toothpick inserted into thcenter comes out clean. (I use a bunt pan because it cooks more evenly for me.

Here's exactly what I made mine with, so people know some solid stats if they care about such anal retentive crap (like yours truly does):
3 large bananas, smashed (less banana = less carbs)
1 cup Splenda
1 tbsp banana extract
3 large eggs (at least I didn't use Egg Beaters, Tara!)
4.5 scoops Vanilla Body Fortress Protein powder (On sale at WalMart!)
5 tbsp "I Can't Believe it's Not Butter" spread (this crap's pretty buttery)
2 tsp baking powder
1/2 teaspoon baking soda
1/4 cup finely chopped walnuts (I gotta have nuts in mine!)
salt
cinnamon
Follow Peex' directions...and I like to dust the top with cinnamon/Splenda before cooking for a nice glossy brown crustiness. Mmmm. MMMMMM!
I like loaves better than Bundts, so I used three 4x8" loaf pans instead, filled to about 1/2 inch from the top. They're small enough that you get lots of edges and it can cook through and through, just like the bundts. Follow the skinny Canugget's directions. You might cook a shade shorter-- check around 35 minutes.
Soopah delicious with butter spread, or a little peanut butter. Nom nom NOM! I put one in the fridge, one in the freezer, and made one for the Sig Ot. Whee!

I do feel a twinge of scolding when you geddup on your whole foods horsey, but the fact of the matter is that for me, balance-- in all things-- is key. Throwing myself into a completely whole food regimen would be just the same for me as throwing myself into a completely fast food regimen (which I honestly once pretty much did.) So your posts are met with some shame, but I am still going to shoot down the middle and practice a diet of healthier choices with some bariatric cheats so that I can eat a greater volume-- it's what keeps me going. I am a food addict. I need to eat often. It's just the way that is.
But I need you to tell me I am a good girl today-- so let me list the before and after veggies!
Before RNY-- the veggies I would eat: (No more than once a month, seriously):
Corn
Potatoes
Peas
Tomatoes, as sauce or salsa
Mushrooms
Now? Daily I eat at least two or three of the following every day:
Corn
Potatoes (rare)
Peas
Green beans
Tomatoes, as salsa, sauce, or roasted
Asparagus
Mushrooms (daily-- I'm a shroomaholic)
Carrots
Squash (acorn and butternut)
Cauliflower
Spinach (fresh)
And I eat ridiculous amounts and types of fruit-- just this week I have had:
Melon
Strawberries
Blueberries
Plums
Pluots
Plumcots
Honeycrisp apples
And in almost three years, I have had literally nothing by Chef Boyardee, Franco American, Frito Lay or any ice cream or pasta.
So tell me I am a good doobee, mama. I hate that I disappoint you!

SECOND of all - shame shame shame on you for thinking I'm scolding! Now I'm scolding! LOL! I deeply deeply apologize for ever making you feel any shame in your food choices.
Your diet post op is a HUGE improvement over your diet pre op. No doubt. That is something to be supremely proud of. You are right, it's about balance. You went from the balance beam being full tilted one way to a happier middle ground.
For me, I grew up with a ton of freshness. It was just part of my culture with a white hippy girl mom who sprouted things and made everything from scratch and a father who is Iranian where huge platters of fruit, meat and vegetables is the norm. So, I view my diet now as a natural progression from where I came from. For me it would be no big deal to say I ate my quota of fruits and veggies. I always have, even on my way up the obesity scale.
Eating a traditional foods diet I suppose can be like anything one would get excited and zealous about. A new religion of sorts. You want to tell and convert EVERYONE to your 'right' ways. And while logically I know this isn't right, I still feel like shouting from the rooftops at times.
I know that eating this way is not for everyone. In fact I feel a little like a salmon swimming against the all the other salmon swimming up stream. Not that I'm 'right', just not what most here are doing.
But, I'll keep posting and sharing. If I can be an example of something different, then so be it. Choosing an actual egg over egg beater, butter over margarine, local organic produce over GMO stuff from across the country, and lessing dependance on processed corn products hopefully won't make anyone obese again.
Soooo... the point of my long winded response is - I never want to make anyone feel guilty. I never want to be rightous on my whole foods high horsey. I will seriously be careful not to do this. I apologize for it happening before. You know I like to tease, so sometimes it's hard to bite the tongue of my typing fingers.
I heart you shari and you are the best good girl ever!!! Oh, and that photo of you perched on some man's lap - HOT HOT HOT! How does it feel to wear shirts like that with no flappage? How do the scars look?
The scars are pretty intense, but really well concealed. No one notices them except in aerobics class, where I exercise in a swimsuit and lycra shorts and have my hands up over my head a lot. And then they ask about it and ask me what I have lost and then they sit their with their mouths agape and never again complain about their soft middles or pesky ten pounds of baby weight they have to lose. ;)
That's not a man-- that's my friend Teddy. My friends were all very touchy-feely when I was bigger but are afraid to approach my body-- and when I told Ted that he told me to sit on his lap...it's his 40th b-day, so I obliged. But I put a phone book down first. ;) (No worries, Sig Ot took the pic! ;)
