I know, I know. It's back to school time and you don't have time to make a decent breakfast, and long for the days you could go through the McDriveThru and have one of those cheesy, maple-y, hammy warm McGriddles? Two maple infused pancakes, with egg, canadian bacon (okay, bacon but bear with me now, I prefer the roundness of the Canuck bacon) and cheese....what's not to love, right?

I'll tell ya what's not to love. Don't love THESE NUMBERS!!!!

McGriddle With Egg, Bacon and Cheese

Calories: 496
Fat: 22g
Carbs: 44g
Protein: 20g
Fiber 1g

What's a lazy post-op fast-foodee supposed to do? Never fear-- I got your back!

Jupiter's QuikGriddle Sammiches!

Above: Maple QuikGriddle with FF Swiss and Canadian Bacon


You can make these with or without egg-- I like 'em both ways, but find the hammy cheesy version without egg makes a nice quick Monte Cristo style snack on the go!

First: Make my standard protein pancakes-- they are dense and stay thick and you can hold it like a sammich, and we add a couple things: (*This will make 4 pancakes---or TWO sammiches!)

2 tbsp whole wheat flour
1/4 cup 0% greek yogurt
1/4 cup egg beaters
2 packets Splenda
dash of cinnamon
a few drops of maple extract

Insides:
2 slices canadian bacon
2 slices individually wrapped fat free swiss or cheddar
(add extra half cup egg beaters if you want to make ham, egg and cheese)

Put all the pancake ingredients in a bulllet blender and blend.

Spray your frying pan with Pam, and make 4 smallish pancakes. Cook on medium heat, and--- here's where the fun is. You can either eat 'em now, or make a big batch:

Let your pancakes cool completely. Put a slice of canadian bacon and a slice of cheese between two pancakes... and save the cheese wrapper! You can re-use the wrappers to separate them and stack 'em in a deli-type container in your freezer. WOOT! Microwave to warm 'em up and presto! "Stacks of snacks!" You can dip 'em in zero cal Walden Syrup, or just eat 'em as is!

If you prefer yours with egg, scramble 1/4 cup of egg beaters with a little water, and divide half onto each sammy.

Yummo!  I love the graphics too.  Looks like you're all set to market these bad boys.    Now, I prefer mine with sausage, but I'd never turn down one with bacon.    Looking forward to making my own low-fat sausage when I can cook again.

Lowest fat you can get is in turkey sausage patties, but unfortunately they are too small and the wrong shape. ;)

Really?  Even if you make your own by grinding up breast meat?    Say it ain't so!    Looks like I have a new mission in life: to find a way to perfect the sausage pattie.

Meanwhile, I'm looking forward to your recipe for a low-carb, low-cal Big Mac!  (and fries!)    Or will Nik come up with that, and then she can call it the Big Nik?  LOL

*Sigh*  Once again, I'm the weirdo.  I never liked sweet and savory in the one thing (chocolate covered pretzels would be the sole exception).  But I'm keeping the pancake part of the recipe for future reference!

You and Nik are wearing me down... I almost made your Carb-quick Chicken Pot Pie... but I figure I'll save it for when it finally cools off down here.
