Sunday Dinner - what's on the limb for the lizzard????

LOL!  I used to LOVE to hear my granddaddy say that.... missin him.  

Anyhoo - what are you making for dinner today?  I'm doing my salmon croquettes and that's probably it - can't really think of anything else and I have tons of stuff in my freezer and pantry if I should get bored at all this week...... I did buy some Hickory BBQ Chicken Breasts at Sam's yesterday - those will be paired with my daily lunch salad all this week. 

I really need to focus on a plan - my azz is chunky and I am NOT happy with myself.  I am going to the gym no LESS than three times this week - forget that workout at home, I need the real deal - no less than 20 min of cardio - because I do need to lose and weight work ain't the only thing my fat arse needs to be doing......

WHOOPS - this is the dinner post, not the 'oh lawd I'm fat as hell, and I'm not gonna take it anymore!' post.  My bad.......

So what are you making????

Guess who's cooking today?!  Yup, its me!

I making turkey wings and thighs and roasting a pork shoulder today.  AND, I'm doing turnip greens with turnips and collards greens too.  No cyber dinner for me today. 

I need to have my protein foods ready for the week so I'm doing two meats today and two more tomorrow (roasted lamb and london broil) so I can pack my freezer.

Now Ms MM,  write down that croquettte recipe for the next time I feel like doing some cooking

Gurllll - I will TRY to put together something for you on that recipe - I swear I'm a 'cook to taste' kinda person - so I will do my best to explain how I do it - there will be lots of 'till it looks like' or 'should have the consistency of' comments in it - so watch out!!!  LOL

Alright - here it is JUST for you!  Like I said - LOTS of to taste and things going on in here.... LOL

Salmon croquettes

 

Ingredients:

 

1 regular sized can Honey Boy Salmon NOT the skinless boneless

1 small can skinless boneless Honey Boy Salmon

½ small white onion, minced fine

2 sprigs fresh rosemary, chopped fine

Plain Bread Crumbs

1-2 eggs

Seasonings:

Salt

Pepper

Old Bay

Cayenne Pepper

Garlic Powder

Onion Powder

Crushed dried Rosemary

 

Open the bigger can of salmon, drain the juice and save – then debone and skin the salmon.  Put in a bowl with the minced onion and dried rosemary.  Then open the other can of salmon – put in the bowl with previous, including the juice.  Use a fork to break up the salmon until all the salmon is evenly broken up.

 

Add the rest of the seasonings and fresh rosemary, stir the mixture well so that everything is combined – season to taste.  Then add the leftover juice, bread crumbs and egg until everything binds together enough so that if you get a tablespoon and round it off and pack it down, it will hold together to fry in hot oil.  After mixing, let it sit for 1-2 hrs to let all the flavors ‘merry’/

 

Heat a shallow pan with enough canola oil to cover the bottom (a lil more that that would be better) – use a tablespoon to measure the amounts for each croquette, round them off and pack them before sliding into the oil – they are done when they are just a bit past golden brown on both sides – you should only flip once.  (overflipping may cause them to break apart)

I'll cook some salmon croquettes later in the week because i'm craving them like crazy. Ordered some nasty ones at another of Charlotte's "soul food" spots a term I use losely because I swear yesterday made #3...these people can't cook.

But anyway today will be cubesteak w/ gravy, rice and steamed brocolli.
