Good info...my hubby is eating low carb with me and he's been dying for pancakes!!! I'll have to give it a go this weekend :)

Gurl!!  Just use protein powder!!   1 Scoop of powder, 1 egg, add a little liquid until its pancakey sorta and then pour into cakes in a hot skillet.  

Also - Macadamia nuts are the least carby of nuts - and if you grind them up into a flour - they have 4 grams of carbs per ounce, but 3 grams of fiber (if you are a net carb person).  

I also make "muffins" out of 1 scoop of protein, mix with 1 egg (sometimes even cut up a piece of buttery cheese, like muenster) and put it in there.  Nuke it up for 45 seconds and YUM!

I also use ricotta cheese and mix with splenda and use that for a sweetcheesy topping.

Great ideas...thanks!!! I already told my hubby and he's soooo ready to try the protein powder pancakes :) Macadamia nuts are my favorite so I'll definitely try those for flour too!!!

You are welcome!!  They are my fave too and Brazil nuts - I also found some mac nut oil to cook things in (slurp).

My new fave pancake is BSN Lean Dessert Banana Nut Bread protein powder, egg, (I use like 2 T of heavy cream for my liquid, but I eat higher fats than a lot of folk) some kinda liquid, and then crush up walnuts and put them in there!!

YUM!!

Also, like cherries have 1 carb per cherry, so if you got frozen ones, and you nuke them (or any frozen fruit, just only use "some") and then put sweetner in there - that makes a groovy syrup for the top!

I usually use a nut flour, or a mix of nut and ground flax, and/or protein powder to make whatever.

I usually enjoy a muffin a day out of protein powder - and will make pancakes for me N fella out of the protein powder - add some choppy nuts in there too!
