I've tried many a recipe for that bird, but here's my favorite:

Brine turkey (I do this for a few days frozen, but if it's fre**** only needs 12-24 hours) in a mixture of 1 gallon of apple juice, 1/2 gallon of water, and 1 cup of salt.

On turkey day, take turkey out of the brine.

Pat dry. Butter the outside of the bird. Sprinkle with salt, pepper, and poultry seasoning.

Insert fresh herb for turkey's bundle (sage, thyme, rosemary) into the bird.

Cook as directed for unstuffed turkey.

That sounds good. I'm just baking turkey thighs and I think they'd be great brined and baked. Thanks!

If you have a small group or a couple of people this works well (I did it for a pot luck of 8 people).

1-3 pound turkey breast
injectiable cajun butter marinade

the marinade comes with the injector. Fill up the tube, stick the needle in the breast at different locations and at different angles and inject it. Place in the oven uncovered for 1.5 to 2 hours. Yummy. Easy, And did I mention yummy?
