I have a recipe for cream cheese frosting.....sorry it is not sugar
free....I suppose you could use the fat free cream cheese: 2 3oz pkgs
cream cheese, 1/2 cup softened margarine or butter (try diet butter), 2 tsp
vanilla, 4 1/2 to 4 3/4 cups of sifted powdered sugar.....in a bowl beat
together cream cheese, margarine, vanilla til light and fluffy. Gradually
add 2 cups of powdered sugar, beating well. Gradually beat in enough
remaining powdered sugar to make frosting of spreading consistency. Frost
tops and sides of 2 8 or 9 inch cake layers. Store leftover frosting in
refrigerator. This recipe was from Better Homes and Gardens New
Cookbook...Bev

Hi,
My husband is a diabetic so here is one we have used.
1 pkg of fat free cream cheese
1 tablespoon of Lite imperial margarine
1 tsp vanilla
2 cups of sifted "fructose powdered sugar substitute"see below
in a small mixing bowl, combine cream cheese, margarine, and vanilla.
Beat at low speed till light and creamy. Gradually add sugar,
beating until fluffy. If necessary add milk to make a spreadable
consistency.
Powdered fuctose:
1 cup fructose
1/3 cup cornstarch
Combine fructose and cornstarch in a blender.
Process on high for 30 to 45 seconds or until
mixture appears like powdered sugar. DO NOT
OVERPROCESS or mixture will become liquid and sticky.
Good luck. Cheri
