Question:
Help me out?!

Could everyone post at least one of their favorite meals or receipes? I'm 10 weeks post-op and would like to expand on what I eat...I seem to have fallen into a rut of eating the same things because they taste good or agree with me. My favorite is the "Fruit Smoothie" I make for breakfast: 8oz of OJ, 4oz. of strawberry yogurt, 3 frozen strawberries and 3 ice cubes in the blender...YUM! And Low Fat Nachos for dinner! Please give me more suggestions! I know when I was pre-op, I looked thru the archives to find what people were eating...and if everyone could post at least one thing...I'm sure it will give alot of us some great ideas!! One of my favorite "early" recipes was chicken parmesan nachos. I see that you're already eating nachos but this is a yummy twist. Take 4 baked doritos - spread one teaspoon of your favorite spaghetti sauce on each nacho - add two chunks of Tyson grilled chicken strips to each nacho - sprinkle with a bit of grated (not the canned sprinkle stuff) parmesan cheese and pop in the oven for about 2 minutes. (It gets mushy if you microwave it). This is a super simple recipe and easy to make larger or smaller portions and after so much bland food this is so flavorful and delicious. Also great for getting in that much needed protein. Good Luck!!

Turkey Quesadillas YUM! It's difficult to get, but if you can find "Let's Do Mexican" ground turkey (I always find it at shoprite. Take the browned turkey, 2% Kraft cheddar cheese, and 2 soft tortilla shells (if the refrigerator section in the supermarket). Bake it for about 15 minutes. Its crispy and tasty. Everyone LOVES it. And it is loaded with protein!

One of my favorite things to eat now is chicken fajitas. They are easy to make and just the right size for me (I'm 1 year postop). Plus it is a good thing to eat when you're out, because they involve a lot of "work" and nobody notices how little you're eating.

Now that it's getting warmer, salads sound so good! I like a mixed greens salad with a small can of tuna sprinkled over the top, with a hard boiled egg, chopped, grated cheese & sunflower seeds; it's a whole meal. Another treat of mine is an artichoke, not very high in protein, but not high in calories, either...and SO yummy! I chop up one or two eggs really fine, like as for deviled eggs & add a bit of fat free mayo, salt & pepper, mustard & eat it by itself or on a few crackers, same thing with tuna or chicken salad. I like cottage cheese with frozen blueberries that are sprinkled with Splenda. Canned chili is a quick high protein meal as is a can of Dinty Moore chicken & dumplings (20 g protein, quick, easy, & tasty). Salmon is very high in protein & can be fixed lots of different ways. I have found it usually easy to digest, too. For some of the most tender & juicy pork you can imagine, try Shake & Bake for pork. It only takes 20 minutes to cook. A pork roast, thrown in a crock pot to slowly cook all day comes out tender & juicy, too. I also eat a fair amount of seafood. Shrimp, scallops, crab, lobster...all are high in protein. Just be sure not to overcook so they get tough or dry. I may be weird, but I also like a scrambled egg or two, with some cottage cheese cooked in-- it comes out soupy, but good. I really enjoy broccoli, asparagus, cauliflower, brussels sprouts & often add a spoonful of cheese sauce. Tacos or taco salad are another idea. I do better with a hard shell than soft shell. Weight watchers meat loaf entree & Lean Cuisine lasagna are good, too. Can you tell I don't spend much time preparing food anymore?
