Question:
I have looked in the library, but there's not much there. I need SF Frosting...
for the upcoming holidays and for a business meeting in a couple weeks. There are a couple recipe options in the library but not much. Does anybody have anything good that I can use? — KelBurt (posted on November 9, 2003)

Sweet and low has a sugar free boxed mix thats pretty good but I hope you
find some yummy recipes too! The sugar free cake mix is GREAT, just add
more water than the recipe calls for. <P>
http://www.diet-shop.com/categories/default.asp#2<P> has tons of
foods that are low no sugar. BTW the cake mix is used on Royal carribean
cruises as no sugar. You CANT tell it from regular cake.:) ENJOY!

Beleive it or not I have never actually made frosting but if it calls for
sugar could you just use splenda instead??? I haven't tried it but if you
do & it works let me know....GOOD LUCK!

Cream cheese frosting is AWESOME. 8 oz cream cheese, 1 stick margarine, 1
tsp vanilla, 1/2 cup Splenda. Also, sugar free whip cream - get heavy
whipping cream & add Splenda.

I use fat free cool whip and add a little Splenda. Takes good and haven't
had any complaints for anyone.

SUGAR-FREE CHOCOLATE FROSTING <BR><BR>
1 envelope Dream Whip<BR>
1/2 teaspoon vanilla extract <BR>
1/2 cup skim milk <BR>
1 (2 ounce) box sugar-free chocolate pudding <BR><BR>
Blend together skim milk, vanilla extract and Dream Whip (or sugar-free
whipped topping mix). Beat until stiff. Add pudding mix and continue to
beat until light and fluffy. Add more skim milk if too thick.
<BR><BR>
Cake would need to be refrigerated after frosting. I'm sure you could
change the flavor too by adding in different flavors of pudding instead of
chocolate.

Here's a recipe to make your own confectioners'sugar (same as powder
sugar): <BR><BR>
SUGAR-FREE CONFECTIONERS' SUGAR <BR><BR>
2 cups nonfat dry milk powder<BR>
2 cups cornstarch <BR>
1 cup granulated sugar replacement<BR><BR>
Combine all ingredients in food processor or blender. Whip until well
blended and powdered.
Exchange 1/4 cup: 1 bread; Calories 1/4 cup: 81

Be careful when you say it's "sugar free" when you add milk.
Milk can still make some people (like me) dump - even skim milk with 13g
sugar. I dump with only 4. So to me, that isn't sugar free. I suppose it
all depends on your audience.

Careful here!<p>
Milk and Dream Whip are far from "sugar free". <p>
Either of these recipes would have me, at very least, taking "the BIG
NAP", at worst, writhing in pain!
