Question:
I have looked in the library, but there's not much there. I need SF Frosting...

for the upcoming holidays and for a business meeting in a couple weeks. There are a couple recipe options in the library but not much. Does anybody have anything good that I can use? — KelBurt (posted on November 9, 2003)

Sweet and low has a sugar free boxed mix thats pretty good but I hope you find some yummy recipes too! The sugar free cake mix is GREAT, just add more water than the recipe calls for.
http://www.diet-shop.com/categories/default.asp#2
has tons of foods that are low no sugar. BTW the cake mix is used on Royal carribean cruises as no sugar. You CANT tell it from regular cake.:) ENJOY!

Cream cheese frosting is AWESOME. 8 oz cream cheese, 1 stick margarine, 1 tsp vanilla, 1/2 cup Splenda. Also, sugar free whip cream - get heavy whipping cream & add Splenda.

I use fat free cool whip and add a little Splenda. Takes good and haven't had any complaints for anyone.

Has anyone ever tried turning splenda into powered splenda in a blender?

SUGAR-FREE CHOCOLATE FROSTING

1 envelope Dream Whip
1/2 teaspoon vanilla extract
1/2 cup skim milk
1 (2 ounce) box sugar-free chocolate pudding

Blend together skim milk, vanilla extract and Dream Whip (or sugar-free whipped topping mix). Beat until stiff. Add pudding mix and continue to beat until light and fluffy. Add more skim milk if too thick.

Cake would need to be refrigerated after frosting. I'm sure you could change the flavor too by adding in different flavors of pudding instead of chocolate.

Be careful when you say it's "sugar free" when you add milk. Milk can still make some people (like me) dump - even skim milk with 13g sugar. I dump with only 4. So to me, that isn't sugar free. I suppose it all depends on your audience.

Careful here!
Milk and Dream Whip are far from "sugar free".
Either of these recipes would have me, at very least, taking "the BIG NAP", at worst, writhing in pain!
YMMV
