Question:
Is there any puddings made with splenda?

Does anyone have any good recipes madewith splenda I can't use anything with nutra sweet I get migraines.I went to the splenda web site but I want to know if anyone else has any,or know products made with it.    — Bonnie S. (posted on January 22, 2002)

OMG! You'll never believe what I just made! PUDDING! I hit the local vitamin store and bought a pudding mix called CARBOLITE. It's in a blue box. It's similiar to a mousse. I have only found it in vanilla. They have it at GNC. Here's the stats. 7 fats. 1 carb. 9 grms of protein. Serving size is 1/2 cup. The box comes with 4 packets of pudding mix--and each packet makes 4 servings. You mix it with 3oz. of water. 3oz. of cream (I used regular whipping cream; not heavy whipping cream). Mix and refridgerate. And, yes. I is sweetened with Splenda. Obviously because of the higher fat content, it's not an everyday thing--just a treat.

The Carbolite products are all pretty good, they even have a ice cream mix.

When I was following Atkins Diet, I used to throw some ice cubes, ricotta cheese, sf jello pudding mix and a scoop of protein powder in the blender and whip up a "mousse" type of thing. I've been experimenting since surgery and have found that if I throw ice cubes, cottage cheese, one of the flavored protein powders and some Splenda into the blender, I get a pretty tasty mix. I'm sure you can adjust the quantity of ice and cottage cheese to get a pudding consistency. I've found strawberry to be my personal favorite but chocolate and vanilla aren't bad either. Good luck.

Just look in a cookbook for a pudding recipe and subsitute the sugar. I use 1/2 granulated fructose and 1/2 Splenda. A few more calories, but I like the taste better. I also made some custard like this the other night and it tasted really good! I am having a hard time eating scrambled eggs so the custard is a really hi protein snack with milk and eggs in the recipe.

I am 3 weeks post-op and really enjoying the jello Sugar Free puddings. The mixes come in a variety of flavors including chocolate fudge, pistachio. white chocolate and butterscotch. I mix them with fat-free milk and surprisingly, they are delicious.
