Question:
Anybody have a good reciepe for Bran Muffins?
Was wondering if anyone had a good reciepe that has some bran/fiber, along with some protien, that would be good for the morning. Thanks — Karen A. (posted on March 11, 2001)

My kids and I love this recipe for Bran muffins and the mix lasts a long
time so you can make as few at a time as you like. I push raisins, nuts,
bananas, blueberries etc. into the mix right before baking to customize.
Makes 5 1/2 doz and last up to 6 weeks in frig.
Mix dry ingredients in large bowl:
16 oz Bran Flakes (look for high fiber if needed)
5 cups flour
3 cups sugar or equivalent amount of Splenda
1 TBSP plus 2 tsp baking soda
2 tsp salt
Wisk together in a bowl the "wet" ingredients
4 eggs
1 quart buttermilk
1 cup oil
Mix "wet" into "dry" ingredients just enough to
moisten. Store in frig up to 6 weeks. Bake in greased cupcake tin or my
favorite(since I sell them), The Pampered Chef stoneware muffin pan for
12-15 minutes at 400 degrees.
We have hot fresh muffins just about everyday. I load up the muffin pan
before bed, preheat oven when I start the coffee, and out they come 10
minutes before the school bus. Enjoy!!!

Actually, if you tend to be pressed for time (like me), and prefer mixes,
Krusteaz makes an excellent low fat oat bran mix. Just add water, (I throw
in some chopped walnuts for the heck of it), and bake.
