Tofu is vegetable protein (bean curd, I think). You can get it in all
kinds of forms, at the grocery store. You can buy tofu in plain squares
and cook it up, or there are many, many foods now that look like something
else but are actually made of tofu (tofu burgers, aka "veggie"
burgers, tofu cheese, tofu yogurt, tofu lasagna, etc.). Some of those
products don't really taste much like their namesakes, but once in awhile,
you can find a good one.

Tofu is a bean curd substance. There are several varieties of the
"blocks". Silky, firm, extra firm, etc. It's flavorless for the
most part and will take on the flavor of whatever you put with it. It can
make everything from breakfast foods (Tofu Scramble) to desserts like
custard or flan. You can find it at most grocery stores, useually by the
salad makings and other vegetarian items that need to be refrigerated. The
other poster mentioned "veggie" burgers, most veggie burgers are
made of grains or wheat gluten and not tofu. You can find cookbooks that
cater to tofu cooking. One of my favorite tofu dishes is called
"braised stuffed tofu" it has a sweet/spicy tomato sauce and the
tofue is stuffed with misc stir fried vegatables. It's all put together and
baked. It's quite delicious.

Tofu is cheese that is made with soy milk instead of dairy milk. However,
it doesn't melt, is kind of squishy, and is a great 'chameleon' food. Any
large grocery store will have it, in several varieties. It also feels
really good in a new pouch. Use recipies designed for tofu until you get
used to it, and if you make something you don't like don't give up on it.
Tofu is good stuff. Good Luck to you!
