Tofu is neat stuff. You know it comes in several versions, firm and
silken, etc. If you use the softer style, you can whirl it up with fruit
for a smoothie. If you use the firmer style, you can slice it about
1/4" thin, wrap the slice in plastic wrap and freeze it (overnight),
and use the result like chicken (it may even turn a little brown, but since
you are disguising it in a dish, hopefully with some kind of sauce, you
probably won't notice). Also, try stuff like miso soup (it's not to
everyone's taste - it's a little salty, but delicious). Or try tempeh. You
can find miso soup and tempeh at most health food stores like Wild Oats.
