Question:
Need some soup/stew/chili recipes...
Hi everyone! I really prefer soups/stews/chili to meals with regular meat. For me, it goes down easier when it's in a soup. I would really like to hear from some of you who have good recipes. I read some from another part of the site, but I'm hoping to get more responses from the question board. Thanks everybody! (Nearly six mos post op and happy at 180lbs) — Kimberly S. I also have an easier time with soup sometimes. Here's one made with
leftover steak (brought home from eating out).
1 to 1 1/2 cups finely chopped/cut up steak or stew meat (if not
leftovers, sautee the meat and onion together in a T or two of olive oil)
1 small onion, finely chopped
1 can low sodium V8 juice
2 medium carrots finely chopped
1 stalk of celery finely chopped
1 ear of fresh corn cut from the cob
1 12-16 oz can crushed tomatoes
2 tsp parsley
1/8 tsp cumin
salt and pepper to taste
Put all items in soup kettle and simmer for three to five hours. Can be
made in a crockpot as well.
Vodka Chicken
2 boneless skinless breasts of chicken broiled, boiled, or baked, then
chopped up
1 small onion
4 T butter
1/4 cup vodka
1 can (12-16 oz) crushed tomatoes
1-2 tsp red pepper flakes (depending on how hot you like the taste)
1/4-1/2 tsp garlic powder
sprinkle of salt and pepper
8 oz cream or half and half
Sautee onion in butter. Add cooked and chopped chicken and vodka. Sprinkle
in spices. Add crushed tomatoes. Simmer. Add half and half or cream.
This may be eaten as is or for family serve over penne pasta or bowtie
pasta. Sprinkle with freshly grated parmesan or romano cheese. (My family
loves this recipe--I eat such a small amount that I don't count
calories...)
Aunt Myrtle's BBQ Bean Chili
1 pound lean ground beef sauteed with one small (finely chopped onion)
1 can pork and beans (fat removed)
1 can kidney beans
1 can pinto beans with jalepenos
1 can baby lima beans or butter beans
2 cans crushed tomatoes
1/2 cup brown sugar or splenda
1/2 cup BBQ sauce
1 - 2 cups water
Put all ingredients in a crockpot (or simmer on low). Spicy and filled
with protein. (and gas for some...)

Its true that soups go down easier because it passes through like drinks,
but it also allows you to eat more and eating more = more calories. I have
the same problem with meats but am really trying to stick to them because
they stay in the stomach (such as it is) longer and keeps us with that feel
full feeling. When I do eat soup I drain as much of the soup part out so I
can get more of the meat.
