Need a low carb dessert recipe!
Hi all! I have 2 potluck functions next week and need to take a low carb dessert. Does anyone have a tried and true EASY low carb dessert recipe with easy to find ingredients? Lap RNY 6/11/02 130 lbs gone! At goal! — Karen H. (posted on May 2, 2003)

Low Carb Lemon Mousse #19514

I had a guest on a low carb diet and she gave me this recipe. It's really
lemony and delicious. There was a slight aspartime aftertaste, but for
those trying to cut back on the carbs it's a great dessert! Prep time
includes chilling.
8 servings
change recipe to:
US Metric
servings
2 hours 15 minutes
(2 hrs 10 min prep, 5 min cooking)
1/2 cup butter
9 egg yolks
4 egg whites
4 lemons, juice of
2 teaspoons grated lemon, zest of
5 packets sugar substitute (of choice)
1 1/2 cups heavy cream
1 teaspoon vanilla extract
1. Melt butter in a medium saucepan over low heat.
2. Remove from heat and whisk in yolks one at a time.
3. Beat in lemon juice, zest and 4 packets sugar substitute.
4. Chill.
5. Beat egg whites and extract with 1 packet sugar substitute.
6. Beat cream with vanilla extract and fold into the mixture.
7. Fold into the chilled egg yolk mixture.
8. Spoon into 8 serving cups (wine glasses work well) and chill for at
least 2 hours before serving.

This in not all that sweet but I love it. I take a big tub of low fat but
not non fat cottage cheese and put it through my food processor. Then I
drain a big can of drained mandiran oranges and a can of pineapple tidbits
and add those. I fold in a small tub of cool whip also. I have heard people
say they add a package of sugar free jello to the cottage cheese but I like
it plain. If you wanted more color you could add some more colorful fruit
like kiwi or cut up grapes.

I know someone else has asked about this before and someone else gave the
address for a low carb cooking site that has LOTS of dessert recipes...I
think you would find it if you looked in the library under dessert.

Nothing too special, but I love to make my family this...all you need is
your favorite fruit(cut into bite size pieces) and your favorite yogurt and
mix and eat, so easy and it tastes good. Also, one poster had mentioned
before, use a low fat or sugar free pie crust(ready to eat) and fill with
yogurt, then put it in the freezer until ready to serve, you can top with
cool whip lite. Good luck!

If you are looking for chocolate recipes, here is a link for Suzanne Somers
chocolate recipes, it calls for Somersweet(her sugar sub), but I'm sure you
could use splenda. They are low carb and sugar-free. Good

Here is one my family adores and it is easy too!!! Crustless Strawberry
pie
2 boxes sugar/fat free cook and serve vailla pudding,2 boxes sugar free
strawberry jello, 2 cups of water and 1 lb of strawberries (fresh) cut the
berries up and place in a 10 inch pie pan (glass looks nice)Mix water and
all mixes in a small pan and cook over medium heta until at a boil. Pour
over berries and fridge for 3-4 hours until firm. It is wonderful with a
small amount of coolwhip free on it. Cool and refreshing! (the boxes of
mixes are the 4 serving size)

Okay, so this is NOT low calorie-only LOW CARB :)....But, it is the easiest
dessert I have! Take equal parts of cream cheese and sour cream and mix
with fresh fruit of your choice (I always use berries as they are lowest in
carbs), and then sweeten with Splenda or sweetner of your choice.It tastes
great and doesn't get any easier. Have fun!

My family loves my berries salad. Take sliced strawberries, raspberries,
blueberries, cubed kiwi, cubed banana and cool whip. Don't add the cool
whip until your ready to go out the door though or it will get runny. I
serve this over sliced angel food cake for the non anti-carb addict :>)
and without for those really watching their carbs.

I like to take 3 packages of powederd coolwhip, 2 packages of sf hot
chocolate, and 3/4 cup of skim milk. Beat in bleander until firm. if too
firm, add milk by the tbsp full and blend until lighter. Then I take a jar
of cherries canned in their own juice,(you can use fresh, but you'd
probably have to pit them) and chop up about 1/2 cup in it and fold in.
Voila! Black forrest mousse.
