Question:
Has anyone tried Atkins low carb muffin or pancake mix?

Just courious if I should buy this or not. Ive tried the protein bars and haven't found one I like yet. I'm trying to stay on low carb but I need some variety besides meat and eggs and cheese. Hi Cindy! Wow! You are doing great!!! I have fixed pancakes with the Atkins pancake mix. They are definitely edible! They taste eggier than regular pancakes, but it's not a bad taste. My DH [who has not had wls] eats them too. We use sf syrup and a little butter on them. I can eat one. He eats 4.

yes, I have used it and it's good. I also use Carbo Lite and sometimes mix the two. They are both good.

Haven't tried the Atkins mix but will offer this suggestion. When I want pancakes, I make them on a Sunday for my DB (and son when he's visiting). I make our regular Aunt Jemima Complete Buttermilk mix, as I did pre-op. I treat myself to one small pancake with butter and Polaner All Fruit or Smucker's Simply Fruit....talk about yummy! The fruit spread sure beats sugar free syrup and makes the pancake more of a treat...so much so my son now eats them that way too! We also have lean sausage links with the grease blotted off with paper towels. 1 small pancake and 2 sausage links and I'm in Sunday breakfast heaven! I make my regular pancake batter with eggs and extra milk so it is runny...then I make a very thin pancake (a crepe) and as the previous poster said, I use the no sugar added fruit spreads (I love Welch's raspberry!). I spread it then roll it up and yummm! I can learn to tolerate the Atkin's bake mix - I can't learn to tolerate the price!
