Question:
Anyone have a no/low sugar recipe for Pumpkin Cheesecake?
Or a recipe that I can use substitutions. I thought about using Splenda, cream cheese, cool whip, pumpkin and spices. Any ideas? — Sarahlicious (posted on September 20, 2003)

My girlfriend who is Diabetic uses a low fat pie crust, fat free cream
cheese and mixes that with a can of pumpkin pie filling(a low sugar, not
sure the name), cinnimon, vanilla and tops it with light cool whip. I like
it, but everyone has different taste. Good luck!

Go to the library and do a search on Pumpkin...I found several good-looking
recipes doing this. I'm going to try the Mini Pumpkin Cheesecakes for
Thanksgiving this year.

Go to Splenda.com and click on recipes. There is one for pumpkin pie you
might like to try. Also the low-fat lime cheesecake is great! Splenda is a
lifesaver I think! Enjoy!!!

I've used the recipe for pumpkin pie on the back of the Libby's solid
packed plain pumpkin and substituted either Splenda or turbinado sugar (the
turbinado sugar was better) for the sugar and both pies turned out
phenomenal! I've done a lot of experimenting and have even printed a
120-recipe book just for WLS patients called Desserts....and More! One of
the things I've found is that pumpkin recipes work really well with
Splenda. Pumpkin also works really well with turbinado sugar, but not if
you have cheesecake in it -- then you'd need to use the Splenda. If you
have a favorite pumpkin cheesecake recipe, I'd be happy to look at it and
tell you what would be the best way to alter it. If you are interesed in
