Question:
Does any one have a recipe for potatoe salad? I am about three and half months outs.

Hi!
remember the potatoes are starch and that turns to sugar and will make you
dump if over eaten.... but I use the low fat free miicacal whip i think is
what its called ... dill pickles... boiled eggs onions chopped small....
some add pimentos and some add celery season... it depends on your
taste.... but again be very careful or you will hate tater salad forever

I use potatoes, onions, eggs, and mayonaise, salt and pepper to taste.

try this, it's not that bad. as with any new reciepe try first on hubby,
children, boyfriend or all of the above.
Cauliflower Potato Salad
2 cups
cauliflower florets
4
hard boiled eggs, diced
1/4 tsp
onion powder
1 Tbs
Dijon mustard
3 Tbs
mayonnaise, low fat

Cook cauliflower in microwave until soft, but not mushy. DRAIN WELL. Let
cool and cut into small pieces. Mix with other ingredients. Chill 2 hours
and serve.

Like regular potato salad, this needs to be chilled to minimize bacterial
growth.
Servings: 4 (1/2 cup) Preparation time: 30 minutes Cooking time: 10
minutes Ready in: 3 hours

I agree with Jenn. The fake potato salad made with cauliflower is very
tasty. With the other things you add, you can imagine you are eating real
potato salad. When I was in WW, I had a recipe called Ha Ha salad and it
seems to be the same things she mentioned. I would have to look it up for
sure, but it will sure fool people.
