Question:
For Phase 3- does anyone use tofu? Any good recipes? TY

Well, you're still drinking protein drinks in Phase 3, and I found this wonderful recipe for a spinach/tofu/onion soup that you liquify in a VitaMix blender. I asked my Nutritionist if I could have that as part of my "liquid protein" and she said "Yes, as long as it's completely liquified." You take a half of an onion and chop it up, and saute it in a tablespoon of olive oil until they become clear (I suggest you do this in a dutch oven - you'll see why). Then, you add A WHOLE POUND OF FRESH SPINACH, and cook until the leaves become fairly wilted. In the meantime, place 6 oz or more of your firm tofu in the VitaMix, along with one can of fat free chicken broth. When the spinach is significantly wilted, add the spinach and onion mixture to the Vitamix, and liquifiy it. The longer you let the vitamix run, the hotter the "soup" will get.... it actually cooks it for you. Then, I just pull myself a large mug of it, and while the mug is only about half full, I add a scoop of Any Why protein powder a few shakes at a time and mix it up well with a spoon after each addition. It's delicious!

I make what I call "scrambled tofu" - it's a pretty loose recipe, and open to whatever changes you like to make! It may not work for you at this stage, but you'll soon be at a stage where you can give it a try. I saute a chopped onion, a green pepper and some minced garlic in a little olive oil, then add some dried herbs like basil, oregano, etc. I add a can of diced tomatoes with the juice, then crumble in a package of firm tofu. I let it all simmer together for about 10 minutes, then eat it with a little bit of 75% fat free cheddar cheese grated on top. Very tasty - really! And you can add any veggies you like - I've made with zucchini or spinach, and there are lots of others that would be great.

I love TVP which is )Textured Vegetable Protein...It is dried bits and pieces of soy and makes a GREAT alternative to ground meat...It's great in soups, stews, chili, as taco mix.....Just add a little water,broth and spices and you've got a fat free, low cal, high protein and fiber food. You can use it right out of hte bag as well on cereal (to add a little protein to your fiber cereals) Or on top of yogurt, pudding or icecream (for those the eat icecream), add to a trail mix...etc! It has almost no flavor at all, so it's quite versatile! And even better news is it's CHEAP! It's only $2.50 a 12 ounce bag (One ounce is a serving, so it goes a LONG way!) I find this in the health food section of the grocery store or where they sell flours and meal...The popular brand where I am in Wash DC is Bob's Red Mill brand...Here is the web site so you can see what the packaging looks like and find recipes and such as well!
