Question:
In search of receipies and daily menus for single-person meals
I'm 6 months post-op. I had the VBG procedure. I've lost 35 lbs so far and am VERY happy with the results, etc. I get my protein supplements by alternating between New-Whey shots (42 g protein, no sugar or fat) and Pure Protein drinks in the can (35 g protein, 3 g carbs) and I'm about to try out a Nectar mix just for variety. However, I'm having more trouble coming up with ideas for meals. I live alone and prior to surgery tended to eat out a lot because I just wasn't a big cook. I'm competent--but it just rarely seemed worth the effort every night for one person. What I need are some ideas for meal plans and some recipies (low in sugar) that are geared for 1 person. Since I can only eat a little less than 2 ozs at a time, even a normal single serving for most receipies would mean two meals. All my cookbooks contain recipies that result in 4-6 servings--which mean 8-10 meals for me now!! I loathe the idea of throwing food away because it spoils faster than I can eat it--I used to do that in the past and I'm very worried it will only get worse now...and in these days with food prices skyrocketing, that's just not an option any more. Hi, yes this is a concern for singles....I will share what I do...I made a
pot of stew, chili, or beans and put in small containers and freeze
them...they are ready when I am ready for them...one sure saves alot of $
and also gets all the protein we need. I get individual pkgs of oatmeal
(SF), SF Jello in separate containers...
You might really like this recipe which is a treat...
2 small boxes of orange or strawberry SF jello
one tub of SF cool whip
1 can of mandarin oranges or fresh strawberries
I had a swoop of protein powder to this
1 small container of cottage cheese..8-10 oz

try. It's called Recipes for Life afte Weight-Loss Surgery by Margaret
Furtado.

I'm not single but I tend to eat something other than my hubby and son, I
scramble an egg and add mustard and mayo, kinda like egg salad and it's
good, I open a can of chicken breast, add light mayo, chopped onions,
chopped apple, salt & pepper and it's chichken salad, I also buy the
frozen seasoned chicken breasts and just take out one and heat in the oven,
I eat beef jerky, it's high in protein, South Beach Diet makes some fairly
good frozen dinners that are high in protein and low in carbs if you choose
the ones without pasta. I don't like to cook so I try to find things that
are healthy and high in protein myself. Good luck and I hope you find

Here is a few ideas that might help you. I am not single but I cook for my
wife. She has always done the cleaning, but never learned to cook. I have
to fix her a meal and me often different meals as she can not lose another
pound or she would blow away.
I use the new zip-loc steam bags for my vegatables as I like different
fresh veggies then she dow. They work graat and they are reuseable, even
though they don't say that on their packaging. I ofter fix myself a stuff
ppper, and I make two at a time, although I only eat 1/2 at a meal. Just
put the surplus in a Zip Lock container and keep in the refrige for a few
days until you want it for a meal again.
I work close with the meat manager at my local store. He makes a small
package of the not perfect cuts of Filet Migon and I fix it with a small
assortment of veggies in the steam bag , or some times I bake them all
together. He also cuts me very thin slices of Veal so I can make veal
pacatta and does the same for me with chicked breast. I man not sure how
he get it so thin. I explained to him the surgery that I hd and that I
needed small fresh amount of these different meats several times a week.
He is one of my best supporters, always commenting on how well I look as I
continue to lose.
There are lots of site with recipies, you just have to learn how to cut
them down to a single serving for yourself or make enought for a second or
third meal later in the week.

Get individual sized freezer containers and freeze the leftovers for later.
This way you have much less cooking to do in the long run. Just pop them
into the microwave and reheat.

I have that empty nest syndrome...I keep thinking I am feeding a family of
four but two recently left! :( So I make stuff and have left overs all the
time. I invested in a "Food Saver"...I LOVE IT!! It keeps
everything tasting as fresh in the freezer as the day I made it...So even
if you make a recipe for two, you can freeze the other half for another
day...Plus with the food saver packs, you have a ton more room than
stacking containers...Then again, you are single so your freezer is
probably empty anyway! LOL But still this takes all the air out of the
package and that is what seals the freshness as it is air that causes food
to spoil or become freezer burned.

I also make a few things on the weekends and freeze individual sized
portions and pull out when I need them. I make bite sized meatballs with
ground turkey breast, minced red and green bell peppers, egg, salt and
pepper, and onion and bake until cooked. I freeze in portions of 2 with a
little sugar free or low carb marina sauce in the smallest Glad containers
and it is great. At Publix, I buy the pre-boiled and peeled eggs and make
egg salad frequently and portion it out over a couple of days. The
smallest cans of Albacore tuna in water with a little no sugar added
relish, mayo and pepper has a lot of protein and very few carbs. Add
celery if you can tolerate it- just tear or cut the threads off the outside
as I find they are tough to digest. I have just the opposite situation as
you do, I have a large family of 6 and I'm the only one with WLS or obesity
as an issue so I too have had to be creative. Snack and Slim protein is
great. I like the recipes from Susan Maria's book and George Stella's Low
Carb and Loving it. Either scale them back for one or freeze leftovers.

Check out your local supermarket for intresting meal ideas. I know several
of the markets in my area are providing precooked meals in the deli case
that work great. I buy poached salmon, baked turkey, meat loaf, Meat
balls, grilled chicken, and sushi. Most of these are cooked and then kept
cold for people to reheat. I can buy small amounts 1 to 2 servings that
make great meals. While they may be a little more expensive than cooking
yourself, I don't have the huge amounts of left overs.
I also generally buy veggies off of the salad bar. I can get just the
amount I need with out having to throw out so much food.
