You can always try a long julienne (sp?) on zucchini and blanch it in
boiling water for a few minutes. This way you keep it a little crisp, like
al dente noodles. Or spaghetti squash is a nice alternative to noodles. I
always get my recipes from www.allrecipes.com. This site allows you to
search by ingredients as well as cuisine. I love it! Hope this is helpful
for you.

My trainer turned me on to spaghetti squash. it gives you the consistency
of angel hair pasta.. and tastes really good... specially with spaghetti
sauce on top of it.

I will second or third that spaghetti squash is awesome and is surprisingly
noodly. We put spaghetti sauce on top.

I loved pasta with basil pesto and kind of made up my own receipe and my
whole family loves it. Take pre-cooked chicken breast cut up into chunks or
strips, frozen stir-fry veggies (or what ever veggies you want) heat in a
skillet all the way through and then mix in one container of prepared pesto
(found in the fridge section). I can feed my whole family and then have
left overs for me for lunch the next day. It gives me my pesto flavor but
also gets my protein and veggies also.

I make lasagna with thin slices of tofu instead of noodles. Extra protein
and pretty much the consistency of noodles!

chop up some cooked boneless chicken into chunks. place into a
microwavable safe cooking dish (i use a pie plate). add one can of drained
green beans. add one small jar of spaghetti sause. top with shredded
cheese of your choice (i use swiss). microwave just long enough to melt
the cheese and get warm. sooooo good. and the green beans actually taste
like pasta. i thought it sounded terrible until i tried it and now it is a
house hold favorite.
