Question:
What to Take to Eat on a Camping Trip

My husband and I are going camping with a group of friends next month. When we go I'll be 5 months out from lap rny. We will not have access to electricity, so no refridgeration. We'll only have ice and coolers, and a barbeque pit to cook on. We will not be close to any stores. Any suggestions for what I should take to eat? Thank you in advance!    — Le P. Hi! Congrats on your WLS! We are avid campers, but we have a travel trailer with a fridge operated on propane. So it's a little easier for me. But I would say to bring some beef jerky, you can also keep some fresh veggies cool in the coolers, and even if they get a little warm thats ok. Just make sure they are sealed so the water doesn't start to soften them. You could take some nuts to munch on. Start thinking of all the things at home you snack on and eat and just imagine which ones need to stay cool or not. You may come up with some good things! Good luck! How about those small cans of tuna? You won't be able to save the left overs, but I think those cans only hold about 3 oz. String cheese, nuts, beef jerky were all good suggestions. Protein bars don't need refrigeration. Have fun!

Small cans of fruit packed in juice, instant oatmeal, Choice DM or other canned protein drink, nuts, possibly small containers of lite yogurt kept on ice, bananas, apples, Detour bars,jerky. Wander through a grocery store and you may come up with some interesting things that don't need refrigeration. (My DH went to summer camp with his Boy Scout troop at 6 weeks post op. He got packets of Vita4Life liquid protein. He got it down just fine, but I couldn't stand the stuff. He did take some of the items I mentioned above.)

The trick I use for all camping trips is to freeze things! Both for the kids and myself. It will keep your coolers cold much longer and you can get creative. Freeze jugs of crystal light. I make sloppy joes and chili, freeze in tinfoil, sealed in freezer bags. Throw on the grill in the tinfoil to reheat. Most anything you cook at home can be frozen. Chicken legs. A frozen shrimp cocktail ring, will thaw to a yummy lo-cal, lo-carb meal. OR: Eggs and canadian bacon. Veggies with lite cream cheese or dip. Wheat Crackers & cheese & peanut butter. Burgers without the bun. Turkey dogs (these freeze well). Unsweetened apple sauce cups. Homemade cole slaw (chopped well), made with splenda. Canned chicken.

We go camping all the time and I also had a hard time the first time after my surgery! what I did was this, I bought everything for chicken fajitas, I froze the chicken and put it in a zip lock bag, I put onions, bell pepper and tomato & the chicken in a foil pouch and cooked it over the grill, flour tortillas and refried beans, there's your dinner! I'll tell you it was the best fajitas I've ever made! another thing I take is stew from the can and it's a big hit, Hope that helps you out. Have a great time:)

I would bring a protein shake that mixes with water - like Nectar. <br><br> Tuna in a pouch is nice so you don't have to mess with a can opener or draining the tuna (I have a good friend that always has one while hiking - good move!). If you have the tuna pouch, it's already drained, too. YUM. The flavored ones are really good too. <br><br> Also, take some protein bars with no coating, or you'll have a mess - something like the GeniSoy Low-Carb Crunch bars <br>(http://shop.store.yahoo.com/carbsmart/gencrunch.html) - they are similar in texture to a traditional granola bar, and taste great! <br><br> And... try the Low Carb Success "Sweet Nut'ns"... How about vienna sausages in a can, or potted meat?? Pork rhinds, pepperoni, you can buy that tuna that is already made up with crackers with it. And I saw that someone already said peanut butter.
