Question:
Does anyone have a recipe for sugar-free pumpkin cheesecake? or know of a web site?

I have tried a few recipes and so far they have all been good. They have a
pumpkin cheesecake recipe.

I found a wonderful recipe from a poster on this website actually. It
makes little cupcake sized cheesecakes instead of a regular sized cake.
Here goes......
SUGAR FREE MINI PUMPKIN CHEESECAKES
Crust:
1 cup HONEY MAID graham cracker crumbs
2 Tablespoons SPLENDA
2 Tablespoons margarine, melted
Filling:
2 packages (8ounces each) lowfat cream cheese, softened
1 can (15 ounces) pure pumpkin *not pumpkin filling, it has sugar*
3/4 cup SPLENDA
1/2 cup egg substitute OR 2 eggs
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
Topping:
COOL WHIP FREE
Prepare muffin tins with muffin papers. Approximately 24-30
depending on how full you fill
papers.
Mix cream cheese, pumpkin , eggs, SPLENDA and spices. Set aside.
In a separate bowl combine graham cracker crumbs and 2
Tablespoons SPLENDA and mix well.
Add melted margarine and mix well.
Press a heaping teaspoon of the graham cracker mixture into the
bottom of each muffin paper.
Then top with filling. I usually fill them about 2/3 full.
Bake at 350 degrees for approximately 20 minutes, remove and
chill before serving.
Remove from papers and top with teaspoon full of COOL WHIP FREE.
