Does anyone out there have any good recipes for salads and casseroles
I know this is a broad question but anyone out there have any good recipes for salads and casseroles and the like for us WLS people. I am almost 9 months post op and would like to have some good recipes for things that we could eat. Thanks — tatterpuddin (posted on October 5, 2002)

I've been having finely shredded carrots with finely chopped onions and red
bell pepper. It's yummy with a little low-fat catalina.

I also do thinly slice cucumbers (English cucumbers make it so I don't have
regular cucumber gas) with thinly sliced red onions. Then salt and pepper
to taste and sprinkle 2 packets of equal on them and pour apple cider
vinegar over the cucumbers. Let them marinate for 24 hours before eating.

If you like Russian Dressing but don't like the fat it has in it, I make my
own sugar free ketchup by putting in the blender: 12 oz. of tomato paste;
12 oz. water; 6 oz vinegar; 1 Tbsp. Garlic Powder; 1 Tbsp. Salt; 1/8 tsp.
cloves; 1/8 tsp dry mustard; 1/8 tsp. cumin. Blend it in the blender until
smooth and put it in the fridge. To make it into Russian Dressing mix 2
parts Ketchup to 1 part low-fat mayo plus 1 T. vinegar.

You can also take the ketchup and add lime juice, a little chopped onion
and worcestershire to have cocktail sauce for shrimp cocktails. You can
add 1 tsp. chili powder, 1 tsp liquid smoke and 2 T. sugarfree orange
marmalade and have yummy BBQ sauce.

I like to eat a salad made of shredded broccoli and carrots. I can buy it
at the grocery store, it is called brocolli slaw. Like cole slaw. I then
make a dressing from low fat mayo, a little mustard and equal. Prety
yummy.

hi there, when i eat a salad, i sprinkle either shredded cheese or boiled
eggs or baco bits or a combo of all so im sure to get protein in. you could
also try little shrimp peices added in there too. there is a casserole i
make for my family. you want to crunch up tortilla chips and place them in
the bottom of the casserole dish then add 1 can of chili you then spread a
thin layer of sour cream or fat free sour cream on the chil, top that with
diced onions and tomatoes and shredded cheese, you can add crumbles
tortillas to the top if you like and also line the upper edge of the dish
with them going all the way around. pre heat oven 350 degrees and bake
until cheese is melted and ingredients are bubbly. i like this but i try to
limit the tortilla chips i eat, i mostly eat the cheese, onions and chilli.
