Jerky- too much pepper

I have tried so many jerkies all of which are to peppery and leave my mouth so hot. I even made my own without pepper but it was nasty tasting (I believe the soy sauce). I would love to find a Jerky (even if it is not beef) that has no pepper. I would also like to get ahold of other jerky receipes to try. Lisa Marie
