What to make for Easter dinner?

My husband and I are almost 2 years post-op and last year it wasn't even an issue. We had a lot of people over for Easter dinner and I made the traditional Ham dinner and just ate a little piece of the ham. My perdicament this year is that I would like to invite my Dad and his wife over for dinner. He had a heart attack about 6 weeks ago and ended up having tripple bipass surgery. He is now supossed to be on a low-fat diet and I would like to make something that he can have, but still have it be kind of traditional. Any ideas???
