How soon before eating Steak? What cut?

How soon before eating steak? I've heard that a filet mignon is the leanest cut, but then again, I've also heard that a sirloin is. I know it's not good to eat it very often, just a once in a while thing, but I can't wait to eat just one bite - 5 wks. p/o.
