How many carbs a day?

Hi folks. I was wondering of those who eat high protein low carbs, what do you try to keep your carb count at? I had followed Atkins for about 8 months the year before last and kept my carbs at about 30-35g and lost 50lbs. The only problem with that is (the reason I gained all my weight back and had wls) that food balance grosses me out. I have never been much of a meat lover...and I know other protein sources such as beens are high in carbs. Also, do you all count calories as well as grams of carbs? I never did when I was following Atkins. I do count now and am eating about 1350 calories a day average. Which I believe is a little high for being almost 5 months post op. How about fat...is that something you carb counters consider...do you eat regular salad dressing, butter, cheeses? I don't dump on any of these things...I have been using the lower fat alternatives...but I know they are higher in carbs...arghhh how confusing...Any advice would be greatly appreciated. -Kim
