Calypso Rice from Jane R's Kitchen Preparation Time: 10 minutes Cooking Time: 20 minutes Serves: 8 (1/2 cup or 125ml) or 4 Dogbytes Cal: 115 calories Amount Ingredient -------- ----------------------------- 1 1/2 C (375ml) Chicken Broth (low sodium is best) 1/2 C (125ml) Pineapple Juice (NO Sugar) 1 C (250ml) Rice 1 med Onion, chopped 1 Red Bell Pepper, chopped 1/2 tsp Turmeric 1/4 C (60ml) Cilrantro/Corander Leaves/Chinese Parsley, chopped to taste Salt to taste Black Pepper In a medium saucepan, bring broth and pineapple juice to a boil over high heat. Stir in the rice, bell pepper, onion, salt, pepper and turmeric. Reduce heat to low and cook, covered for 20 minutes. Remove from heat and let stand, covered, for 5 minutes.
