Healthy Potato Salad

Preparation Time: about 15 minutes Cooking Time: 15 to 20 minutes Serves: 15 or 10 Dogbytes Cal: exchange: 1/2 cup (125ml) = 1 starch, 1/2 fat Amount Ingredient -------- ----------------------------- 3 lb (1.35kg) Potatoes 3 T Apple Cider Vinegar 2 tsp Mustard Seed 1 1/2 tsp Celery Seed 1 C (250ml) Chopped Celery 1/2 C (125ml) Finely Chopped Green Onions 3 Hard Boiled Eggs, chopped (you can leave out the yolks if you like) 2 c (500ml) Plain Low Fat Yogurt to taste Salt to taste Ground Black Pepper garnish Paprika (just a sprinkle on top) Combine vinegar, mustard seed, and celery seed; let stand covered for several hours. Bring a large pot of water to a boil. Add potatoes and cook until tender but still firm (about 15 to 20 minutes). Remove potatoes from water; set aside to cool. Peel, and then chop into bite size chunks. In large bowl sprinkle potatoes with a pinch of salt and pepper. Add celery, onions, and eggs; toss lightly. In a small bowl, combine plain low fat yogurt, vinegar mixture. Add the yogurt mixture to potato mixture; toss to mix. Chill thoroughly before serving. Garnish with a sprinkle of paprika.
