Why dump on some things, and not others?

Saturday night, I think I dumped on sunflower seeds. Stomach got really naseous, and then had to run to the potty. Sunday night, I had to drive about 4 hours, and I got some coffee at a rest stop. No sugar substitute, so I put sugar in the coffee.. and no dumping. Last night had low fat pudding (I thought it was sugar free, but it was low fat) and I dumped. Why am I dumping on things I didn't think I'd dump on? And not dumping on things I thought I would dump on? Does it matter if there is something in our stomachs prior to eating something with sugar in it? Two months post op, and first time I've experienced it.
