When is it safe to leave the country?

I have planned a "World Tour to Italy, Turkey, & Greece" with some friends for summer 2003. I will be out of the country for 16 days at about 2.5 months post op. Is it safe to think of leaving the convienence of the states so soon after lap RNY? I am concerned about the diet that will be pre-selected for me by our tour guide. I am also limited to luggage(1 large piece). Any suggestions?
