Cheesalicious Chicken Enchiladas

These enchiladas have two secret ingredients: yogurt and beans. Believe me, I’ve tried this out on the pickiest of eaters, and they’ve had NO idea they were eating white bean puree, AND they LOVED it. (Might I also add they said it was their favorite enchiladas;). If you wanted to sneak more veggies in, cube up a yellow squash to stuff into the enchiladas. Serve with a fresh pineapple salad. YUM!

4 large cooked boneless, skinless chicken breasts (about 4 cups)
1 cup non-fat Greek yogurt
1 (10 ¾ ounce) can low-fat cream of chicken condensed soup
10 ounces (about 2 cups) reduced-fat 2% shredded cheddar cheese
1 (4 ounce) can mild green chopped chilies, drained
about 10 high-protein, high-fiber flour tortillas (such as Flat-Outs)

Cheesy Topping:
1 (14 ounce) can great northern beans, drained
8 ounces plain yogurt or light sour cream
1 ½ cups 2% reduced fat shredded Mexican shredded cheese blend
¼ cup sliced green onions (optional)

1. Preheat oven to 350 degrees F and spray a 9×13 inch baking dish with nonstick cooking spray; set aside.
2. Mix together the chicken, yogurt, condensed soup, shredded cheddar cheese, and green chilies. Stuff each tortilla with ½ cup of chicken mixture, and roll up. Place each rolled up tortilla seam side down in the baking dish. Set aside.
3. In a blender, combine beans with plain yogurt (or sour cream). Process until smooth (may need to add a splash of milk or chicken broth to reach a smooth consistency). Add shredded cheese and pulse blender once just to combine. Spread cheesy topping evenly over the enchiladas.
4. Bake uncovered for 30 minutes, until toasty and bubbly.
5. Sprinkle chopped green onions over enchiladas and serve!

Hi Molly-

Keep thinking positive!  Take a moment and write down a few ideas of how you can reward yourself with something else besides food.  Here are some ideas:

Pedicure
Manicure
Facial
New outfit
New hair do
New CD
New DVD
etc...

Increase your protein and exercise and focus on the end goal!  You will get back track and be successful.

I leave you with this affirmation ~ I choose to make positive healthy choices for myself!

Celebrate in your current success and continue to look for inspiration with your WLS friends!

Topic: Nasty habit I have.
Well it has been a shaky 2 weeks for me. I have a problem with rewarding myself with food when I lose weight and it did not help that TOM was came right  after I lost 8 pounds.  So I have gained 6 pounds over the last 2 weeks. (I did not weigh in last week so it could have been more) 

My goal is to lose 1 to 3 more pounds by next Monday for my September total. 

If not I am good with the knowledge that I have not gained for the month and will have a loss for Sept which is consistent.  I am not losing what I would like to each month but I am losing something each month.  

I am not going to gain anymore weight this month.

Hi Trac!

I do have a scrip for Ondansetron - and I am starting to take it first thing in the morning.  I was forgetting I had it (stupid me) ....so I took it today and I still had some nausea. 

Great idea about contacting the bariatric dept for self pay.  That thought had crossed my mind and I think I will call the dr that has been suggested to me (not in the Kaiser network but will accept other surgeon's patients) the surgeon IN the Kaiser network does not accept other surgeon's patients..so even IF my appeal gets approved - I might still be out of luck eh?

I have not tried soy milk, but it's something I've been thinking that I should try out.  I was also directed to a website that has LOTS of different samples.  Going to order some.  Also I guess I could try to add just a TBS of powder to a smoothie - better than nothing right?  The entire scoop..ugh!!!!!

I wish I could get scoped to see if there's something else going down there.  I am going to suggest it to my PCP and see if he can help me out there.  As far as my original surgeon helping out - he's in Michigan - I am down here in GA.  I saw him before I left and I asked if could point me in the direction of anyone and unfortunately he doesn't know of anyone down here.  So I am on my own. 

So wish me luck.  I want to get this resolved and get on with my life.   Thank you so much for replying to me!!

Yes Kaiser is a mysterious land unto itself!!  I really liked it at first - but now not so sure what I think.  My PCP has supposedly started the appeal process - I'll try to find out more tomorrow.

Now is not the time to become timid. There is so much more you can--and will--accomplish. Overcoming obesity is just the beginning. Continue to harness the daring spirit that made all of this possible and embark on a new phase in your life. Nothing can stand in your way if you choose to dare.

 

Action for the day: List the steps needed for the next "big" goal you have and begin taking the first steps today.

Interesting!  Perhaps that is because we are soooo accustomed to taking care of others and neglecting ourselves that we don't see our own positive qualities....
