Tell me about it! I'm making eggplant "bread" pudding tonight.. I'll let you know how it turns out!

I made her mini doughnuts and bought the contraption to make zucchini "pasta".

Please let me know...her eggplant "french" toast has been on my radar for a minute!!

Thanks much Jo. I'm ridic addicted to all things pumpkin (heck, I even feed it to the dog!) and it's hard to resist the treats at Starbucks and stuff.

So I tried this today with a couple of variations and it worked perfectly.

I didn't have almond flour so I just threw a cup of raw almonds into the food processor and ground them all to heck. For the protein powder, I used 3 28g scoops of a cinnamon/vanilla powder that I had from Protein Factory. I also doubled the spices (used the remaining pumpkin pie spice in the house and then added Maria's recommendations). Didn't have Swerve and my protein has a little bit of sweetness in it so I ended up adding about 8 packets of splenda.

Baked at 325 for 10min as my mini muffin pan is bitty. I'm gonna end up with 36-40 muffins I think. :)

Thanks for giving me the push into low carb baking. I can't wait to try more. :)
