Through Thick & Thin

After the beginning phases following my gastric bypass I found myself eating the same foods day in and day out. So I began researching recipes and found several different resources. The bariatric foodie is a great website to visit. It was created by a bariatric patient that also felt stuck in a rut with her food and decided that she would find a way to make food taste delicious and would meet her nutritional needs. She also has a couple of books you might find interesting. Pinterest is also a good resource. I have found a few recipes that claim to be "bariatric" recipes but contain ingredients my nutritionist says I shouldn't have such as honey and agave. Of course check to see what your nutritionist has to say about different sweeteners, both artificial and natural. It may sound silly but I play a game that is like the "bariatric" version of Chopped. Like lasagna...how can I make that bariatric friendly? Hmmm...I used squash, cottage cheese, skim mozarella, and some low carb, low cal spaghetti sauce. Then I was craving that cheesecake type flavor. Creamy and tangy...so what I came up with was mixing cottage cheese with a little bit of sugar-free jello cheesecake pudding mix and a little bit of skim milk. You have to get it to a consistency you like and you can blend it or leave it chunky and let it set in the refrigerator. You can add some fresh berries on top and you have yourself a little protein packed cheesecake. Voila! Care to share any of your recipes? Or go to foods?
