Ruth, amended for UK comprehension! Delicious both hot and cold! Simply because of the pack sized I bought, i used much more sausagemeat and less mince. It says for 10! Well that is a generous 10! 4 of us ate it hot (3 with large appetites and me!), the next day 4 ate it cold. And I froze 1/3 of it uncooked!
If you haven't got a US cup for measuring - I cup is about 2/3 of a small mug.
I used a med loaf tin for the 2/3 and put the rest in a foil case for freezing
When I checked it after 45 mins, swimming in liquid and was worried, but it all vanished by end!
Pepsi's Meatloaf:
2 X 1/3 cups salted crackers (TUC or Ritz); crushed, but not too much, by rolling in plastic bag.
2lbs lean mince beef
1/2 lb sausagemeat
large egg
2 med onions chopped
i med green pepper, minced
3/4 cup tomato ketchup for mix
1/4 cup tomato ketchup for topping
1/3 cup worcestershire sauce
1 tsp salt
1/2 tsp black pepper
not in original recipe but I will add next time, chopped fresh herbs
mix together all ingredients except topping tom ket (by hand)
oven 325F, foil covered
after 45 mins, remove foil
pour over topping ketchup
back uncovered for one hour
stand 10 mins before serving

I'm a bit of a mixture!! Most of my teaching career was teaching Psychology and Sociology A Level and Law GCSE. And in my last mainstream school, I was Work Experience and Careers Co-ordinator.
Then I got fed up with all the initiatives! And working every weekend, every evening and most of my holidays! So I changed careers! And I have just retired after 7 years as a class teacher of MLD and SLD teenagers! The MLD were the sort who were borderline able to go to a mainstream comp and so added severe behaviour problems to their overall learning disability (including autism) - so challenging! But the last two years I had SLD students - several Downs and other less known syndromes.

OK So after a delay of almost 24 hours here is this week’s update:
Weight:
First off my weight this week is 1 pound less than last week, Not as good as it has been, However the fact I'm still loosing weight is great, It will slow down and I just have to start working harder/longer to keep it going now.
My Thoughts:
Ok now something that hit me a few months ago and that I have been meaning to share is the following (A friend actually posted the same and it has woken me up enough to make sure I post it too)
Being overweight is a psychological problem more than a physical one. Discover why you are overweight and work on disempowering the reason. I suspect that in the majority of cases a weight problem is the side affect of head issues such like low self esteem or self worth, psychological trauma etc. If you comfort eat use your inner voice to challenge, balance and eventually disable the negative messages you give yourself.Harness the bad feelings, turn then from upset to anger to motivation. Motivation to find out what the problem is. Then motivation to fix it and fix yourself. YOU ARE WORTH IT.
Helping Others:
I spoke to someone this week who asked me for tips on how they can loose weight, I told then to work exercise into their lifestyle, I have to exercise to get to work, if I choose to go the the gym after work then I could come up with reason not to do it. If I choose not to cycle it means I either don't go to work or don't go home.
While I didn't promise them it was going to be easy I did promise my help and support. The reply was “Sorry I just don't have time for exercise" I asked them to write down what they do in an average day. The results included 4 hours of watching TV. Saying you don't have time to exercise but have time to watch so much TV showed me that person was still in denial. I advised they were not ready to make the change and I offered my support once they were. It only took that person 3 days to get what I was saying, its not easy but if you want something enough you will fight for it, I just hope I can do that person justice.

My PB to work 22 Mins
My PB to and from work was achieved this evening doing the 14 miles in a total of 1 Hour 00 Mins and 37 Seconds, Shaving 4 and a half mins of my previous PB.
My Inspirations:
I have done a few interviews for weight loss related publications recently and during them I was told that people may see me as an inspiration. However I was asked who inspired me.
After giving up all hope of loosing weight on my own and being approved for weight loss surgery. I started to watch an American TV show called “The Biggest Loser:Couples" . It was while watching this show that Mark Kruger, Roger Schultz and Ali Vincent showed me that it was worth one last throw of the dice, I was lucky, I pulled a double 6 on that throw.
My Hair:
Yup I know my hair was a huge part of me and EVERYONE was shocked at what I had done. That said this is the NEW me, I have a new attitude, new life and now a new look, Will it stay ? I really don't know but it will never go back to how it used to be, That's the old me and it’s not coming back.

Time to get some publicity going, I have been in 2 local papers, I have held 3 interviews this week, 2 with weight loss related publishers and one with the publisher where I work, I have also thanks to some great people got a few posters done, So feel free to print them out and stick them up around your local town, pub, cycle club etc The more donations the better.
