Apple/Banana/Cherry Cake

Use UK, not USA quantities.

1.25 cups Almond Flour
two thirds cup Canderel granular sweetener
tsp baking powder
tsp cinnamon
pinch salt

2 eating apples, no peel or core, chopped small (or 2 small bananas or half cup cherries or apricots etc).
half cup vanilla yogurt
2 large eggs

Mix ingredients.  Use non-stick greased 8 inch tin.  Pre heated oven, 180C for about 25 minutes

I've used cups instead of weights as the US sites and books that I've looked at for inspiration have all used cups.  The US cup is smaller than ours, as, incidently is the US gallon.  The next time I make thisI'll weigh the ingredients, if anyone is interested.  You can use ground almonds if you can't find almond flour, and it's lower in carbohydrate and higher in protein than flour.  The baking powder gives a slight rise.  The cake with apples has a dry, crumbly texture, perfect with custard!

mmmmmmm, I've got some over ripe banannas - but didn't wanna cook, not sure if my self control can take it (used to cook and bake a lot and eating whilst cooking is my weakest point). But as I would be able to have some of this, think I'll give it a go this week. Thx

I cut this into 16 squares, so it's ideal as a snack.  Store in an airtight container in the fridge.  If you're having trouble with self-control (like me!) then you could always freeze them.  I wonder if I could make a Yorkshire Pudding equivalent....  Have fun.
