Hey all!!

It was a bit warmer today eh? I am really starting to look forward to the warmer weather. Warmer weather here isn't as HOT as it was in the US where I used to live!

So-on to recipes. Got some? Share em here! I will admit that I REALLY bite at cooking. But-I am learning to TRY my hand at some cooking (poor sweet hubby!).

I have a "recipe" (because it's NOT really like cooking!). I thought of Ruby on this one-because it is veggie.

1 whole wheat small Tortola
1 can of refried beans fat free
Soy meat patties (You know the sort-veggie burger of whatever sort you like)
Bit of shredded cheese
Salsa (or whatever concoction you might like for sauce)
Lettuce
Tomato
Onion

Easy I tell you! Grab some low fat margarine and get a skillet. Butter the tortilla and put it in the skillet. (that part of the instructions is for me-as I would be thinking.."THEN WHAT?" LOL!)

Add some re fried beans and all other ingredients-and heat until the tortilla is crisp! GOOD protein and pretty much OK for most WLS folks who aren't too new out. I eat about half of one.

I LOVE soy burgers. We just bought 2 boxes and they are in the freezer (that means we have 120 burgers)!. The price is excellent though and soy based burgers seem to be in short supply here (I find mostly they are made with mushroom protein by quorn and I dont like those).

Each burger has 18 grams of protein.

I will add a tofu taco recipe.

I grab some firm tofu and place it on plate with paper towels under and over the tofu, then add another plate on top with a heavy bowl of water. I allow that to sit for an hour to squeeze out excess water.

Then take some onion, pepper and garlic and saute in a little olive oil (or low fat butter) and then crumble the tofu into the pan. Add some liquid smoke (maybe a teaspoon), some crushed fennel seed, some cumin, some chilli pepper and brown the tofu for about 5 to 10 minutes and then add a few jars of taco sauce and let it simmer for about 15 to 20 minutes.

You can eat this with some refried beans, some black  beans in a bowl with a little shredded cheese or in a whole wheat wrap...however you like.

*you can skip the onions and peppers and garlic if you like and go straight to browning the crumbled tofu. I would just add garlic powder and onion powder to the seasoning.

Oh I have one more that could be a dessert and its packed with protein!

This is with silken tofu.

This can made in blender or a food processor.

Take a carton of silken tofu, a banana, a few tablespoons of cocoa powder (unsweetened), fake sugar (any which one that works for you), 1/2 teaspoon cinnamon and a tablespoon of vanilla extract and blend. Pour into 4 containers and cool for an hour. You can also add some crushed walnuts to the top if you like.

This is a protein packed chocolate pudding (you can minus the banana if you dont like it as well).

Hi, Ms Redd!

I have a favorite place for some really great recipes:  the South Beach Diet site.  I particularly like their Coconut Shrimp recipe which is really great tasting and easy to fix.

Good for you in getting this site going!

Anyone used quorn mince?  I've seen the ads on tv for it saying it is high in protein.  Is it higher than beef mince, what about the calories in comparison?

I did a new simple baked tofu recipe and I like it.

Just slice some firm tofu into 1/2 inch slices and pat them dry and put in baking dish. Brush with a little olive oil and do a pinch of salt and pepper on them and bake for 10 min at 225 c or 450 f. Also

While thats baking mix this up

2 tablespoons soy sauce
1 tablespoon olive
1 tablespoon sesame seed oil
1 teaspoon sesame seeds (can do flax seed crushed too)
1/2 teaspoon red pepper flakes
2 tablepoons chopped scallions

Take the tofu out after the 10 minutes and spoon this onto each one and bake for another 5 minutes.

I served this over some whole grain bulgar and baked veggies. I also tossed the bulgar and veggies with 1/4 cup soy sauce and 1/4 white vinegar. I also added in some rinsed and drained beans.

Its a nice fiber and protien rich dish. I also ate it cold but it can be eaten warm as well.

FAT & SUGAR FREE FRUIT CAKE   12oz mixed dried fruit (mixed peel, cherries or whatever you want) 1 large mug of hot strong black tea

Put the fruit in a bowl, pour over the hot tea & leave for a few hours or overnight
  To the fruit mixture add

1 large egg
1 teasp Bicarbonate of soda
8 oz SR flour
1 oz Candarel powdered sweetener
Chopped nuts & cherries if desired

Fold all ingredients together & pour into a greased & lined baking tin
  Cook for 45-60 mins at 180, or until a skewer comes out clean   (If you don't want a too crispy or brown top, cover with tin foil for the last 20 mins of cooking)
