Losers for Lent
Recent Posts
1 cup berries (fresh or frozen-defrosted) topped with SF caramel syrup, and a good dose of whipped cream. If used as a meal - I also add chocolate protein crisps, and or some nuts. Yummy. (that I gave up for the lent)
Another - is cheese with SF preserves. Cherry is my fav.
The next is (I have it almost daily) very dark - 85 or 90% chocolate. High fat, low sugar. 1-2 large squares. It does not affect my BS and it is good.
The next - is a piece or 2 of my high protein low carbs banana/pumpkin bread. With SF jam, or nut butter, etc.

Here is one that my whole family enjoys! With approximately 13 carbs for the whole recipe, it is a keeper!
Cream Cheese Pancakes
8 oz cream cheese, softened (6.4 carbs)
3 eggs (1.8 carbs)
2 T protein powder (.7 g carbs, depends on brand) (can sub Atkins type bake mix)
2 t imitation vanilla (.2 g carbs)
3-4 packets of AS (3-4 g carbs)
Whip the cream cheese until smooth and creamy. Add the remaining ingredients slowly. Put a little oil or butter on griddle and heat it up, pour in the batter and fry up like pancakes! You want the pancakes to be full of dry holes before you flip 'em. If they're not ready to flip, they'll break apart. Top with butter and DaVinci pancake syrup, or cream cheese and sugar free jam and enjoy!
* Make sure to calculate any carbs from toppings. The protein powder can be any type or flavor- vanilla for plain, chocolate for a light chocolate flavor, strawberry etc. As you move up the carb ladder try it with a couple spoonfuls of blueberries. (If using frozen, thaw and drain well.)
I found this on line a while back. The post is below. I've since tried it with a few alterations. Water and fat content change the texture. My favorites are:
- using a tsp of smart balance lite (15 calories) in place of the spray, dry crumbly dough
- for a buscuit, , add a pinch of baking powder, omitt sweetner, add a pinch of salt, add dried herbs to taste and a little more water making a softer dough
- oven baked cookie add a tbsp lc bake mix, pinch baking soda, bake at 350 till easy to remove from cookie sheet
- make flavors with crystal light instead of water, baking extracts, unsweetened cocoa powder, instant coffee
- make a soft dough for a scone like texture.

Mix the protein powder, butter spray, splenda, and water in a bowl with a for****il it forms a ball.Hint: I take the sprayer off the butter spray bottle and just pour some in.
You might have to work at it for awhile or adjust how much of each ingredient you use.
Microwave for 25-30 seconds.
Sprinkle with pumpkin pie spice if desired.

Most of the recipes are pretty simple for the protien ice-cream:
1 cup of milk or soya milk
2 scoops of protien powder
some flavoring of choice
Then get creative with friuts and what ever pretty much.
Hope these help with the sweet tooth.
Take care,
Nancy
This makes enough filling for 2 pies!
I have a calorie count site at work (I'm home now) and I will run the numbers in the morning.
I have TONS of recipes too......maybe I'll post a few more.

Carolyn's Flourless 3-minute Chocolate Cake!
1 egg, beaten well
1/2 tsp. vanilla
1 Tbs. heavy cream or half/half or CC milk
2 Tbs. cocoa
10 tsp. of sweetener of your choice (this time I added 5 packets of Splenda)
1 tsp. baking powder
1 Tbs. softened butter
In a small bowl, beat egg with fork and add in the rest of the ingredients
until
a smooth batter is formed.
Pour into a cup which will hold 8 ounces. You could use a coffee mug..I
Pammed it..Microwave for one minute..
The carb count would depend on the sweetener. You could use Davinici
syrup..I don't think it would affect the texture of the cake..But, without
the sweetener, you would have .7 carb for the egg and 2 NET carbs for the cocoa
powder<http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_cocoa_powder_page.html>..About
3 net carbs in all..then add the sweetener carbs.
And a few "tweaks" folks have made...
"I put in some flax
meal<http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_flaxseeds_page.html>instead
of a Tb of cocoa and it was a really good addition."
"Halfway through the cooking, put in SF Dove chocolate..It will sink then
melt to make a creamy center..You could also melt one on top and just spread
it around the top for a frosting..Then add whipped cream.."
"I was also shooting for a lower calorie option. I used 1/4 c eggbeaters
(30), 2 T low fat sour cream (35), 1 T cocoa
powder<http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_cocoa_powder_page.html>(20),
1 T flax (30). Instead of the cream I used water - I was out of the
Carb Countdown Milk I usually use. It was excellent and only 115 calories!
Good deal!"
"made this with vanilla protein powder instead of cocoa...topped it with
plain yogurt, then I poured strawberries and blueberries sweetened with
vanilla Davincis<http://www.netrition.com/cgi/goto.cgi?aid=281&url=davinci_syrups_page.html>
..."
"I put a Tbspn of the powdered peanut butter (PB2) that I just got in the
mail instead of one of the Tbspns of cocoa and it was great!"
"I tried using the vanilla protein powder like carbkinky instead of the
cocoa, and it was also delicious!!! I added some sf strawberry jam and
whipped cream to top it off...yum....
I also started thinking about the consistency of this...and thought...this
may make for great bread!!! So I experimented with not adding the vanilla
extract<http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_vanilla_extract_page.html
