I would say whatever is most convenient for you Tawnya.  I have not been involved for quite awhile nor do I know if I will be, but please keep me informed of the group's happenings and I may be back.  I am not surprised this is such a large group.  The leaders are awesome inspirations!

Email works great for me. 

Another thought is using E-Vite.  Terrell Troopers uses that to send out their meeting reminders with the date, time and location as well as any additional info they want to share.

First, I'm excited to tell you we have over 125 members!  That is so awesome.  OH, TMB and our group has so much to offer to each others and new comers.  You are a bunch of very special people and I am here to do anything I can to guide you through your journey as part of our group.

Second, I'd like to explain that because our group is so large we have surpassed the current OH capabilities and I can no longer send out a single group PM message.  While I love you all dearly, I absolutely do not have time to send over 125 seperate PMs.  So I have a favor to ask...especially about communicating our monthly meetings and any chats we decide to schedule.  How are we gonna get the word out?

If everyone wants to email me your email address I can create a single group and send emails.  I can post a notice on TMB telling you to check the group site for meeting details (I can do the main board to if we have members who spend more time there), but again I don't have time to post on a ton of boards and I know we have a widly diverse group.  So if you want me to post, we'll have to vote and use the two most preferred.  I can do 2 posts.  But, quite honestly I'd rather send an email and post on our discussion board.

I like it on our discussion board because it's an easy point of reference to come back to if you forget something.  I just need a way to tell you the info is there and my preference would be for email.  I get a ton of email in my 6 differentboxes, so I know that has its own obstacles.  But, that's just my vote.  Tell me what you want and  we will take it from there.  And again, only needing to establish this for meetings.  Any other announcements, tips or conversations will have to take place on the discussion board here on our group's site.

I've also used a short cut and bought frozen cauflower.  I microwave it till it's mushy and falling apart to the touch.  I put it in the blender with about 1/2c skim milk and half an envelope of dry ranch sald dressing mix.  Kids love the ranch taste.

Mashed Cauliflower Recipes

Mashed cauliflower is a great alternative to mashed potatoes! Top with your favorite potato toppings and you will hardly notice the difference - great low carb option.

 

Basic Cauliflower Mash Recipe

Ingredients:
2 pounds cauliflower, trimmed
sea salt
1/4 cup skim milk
4 tablespoons unsalted butter
1/4 cup cream cheese (optional, but increases creamy texture)

Directions:

Cut the cauliflower, including the core, into 1-inch pieces. Bring a large pot of water to a boil and salt lightly. Add the cauliflower and cook over medium heat until completely tender, 20 minutes to 30 minutes. Drain cauliflower in a colander. With a bowl or small plate, press on the cauliflower to remove all water. Toss the cauliflower and continue pressing out the water. This step is very important to the texture of the dish. Transfer the cauliflower to a food processor. Add the milk and puree until completely smooth. If you like a chunkier texture, mash by hand, adding the milk after cauliflower is mashed. Return to pot. When you are ready to serve, heat over low heat, stirring constantly. Add the butter and cream cheese. Stir until incorporated. Season to taste with salt, if necessary. Serve immediately.

serves/makes 6

Garlic Mashed Faux-tatoes Recipe

Ingredients:
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Directions:

Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook it in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth. Garnish with chives, and serve hot with pats of butter.

serves/makes 4

Great guy (Dr. Will Clower)  and very intuitive program.  Don't let the name fool you.  This is not a "diet."  It is a way of living and eating so that you get the very most enjoyment out of the foods you do choose to eat.  

Below is a link to his sight, but don't buy anything or sign up for the program quite yet.  He will be establishing a promo code for OH users only.  The program is taylor-made for us as WLS patients.  He is to get the info to Bo who will get it to OH and then we should get a code soon thereafter.  I'll email Kim at OH and ask for her assist.

Tawyna, I missed Dr. Stapleton's session but I bought her book and look forward to reading it. 

If you have info on the Mediterranean Diet I'd love to see some of the info.
