Great to meet you at chat this evening. What is your first name? Are you cooking for one or several. Makes a difference on options some of the time.

I had rny sept 2009, and cook for myself and my picky hubby. He loves carbs and know I can't have many of them. He supports me as best he can. I do the cooking, he does the cleanup. Works well for us. He is better off not knowing what is in a dish at times.

I made pork chops with sliced apples on them last evening, we had leftovers tonight. I simply sprayed a baking pan with nonstick spray. Placed the pork in the pan and sliced cored apples on top, granny smith this time (we had a couple left that were not crisp enough for eating raw). I love applesauce with pork, this was very coarse applesauce. Kept the pork tender and moist too. Dennis doesn't know it, I sprinkled a little sage on the pork before adding the apple slices. Covered and baked for about 40 minutes, these were thick sliced pork chops.

I am going to be away for a few days and Dennis is making a shopping list for what he wants to eat while I am gone, spuds is on the top of the list, I peeked.

You are welcome Linda.  We can share food ideas back and forth.  My hubby work rotating shifts and I am often cooking for one.  Have you considered freezing meals in portions.  Easier than coming up with fresh ideas daily.  I seem to cook something and we have it for the next 2-3 days.  Thank goodness Dennis like leftovers.  Sometimes the same meal, reheated just does not sit well in my pouch.

I and others have posted some recipies in a thread near the top of this page, check the thread for ideas.  Also good ideas from Cleopatra Nik, Pam T, and the world according to eggface.  They all prepare smaller portions.  Good to share ideas with others about different ways to prep foods.

I am on a salad kick for the last couple of days.  Putting dices leftover meat on a bed of luttuce and adding just a drizzle of dressing.  This does  not work well for those fresh out from surgery, but is ideal for those of us farther out.

Let me know how your like the apple and pork chops.

Welcome Best Friend! I am also quite new, just joined a few weeks ago. I think you are very courageous for joining and coming back to the fight so to speak.  I can totally relate to the brain part - how to work on the thoughts that make us fill our stomachs when they may not need any additions? I am certainly a work in progress but also learned you can start anytime and make progres; start from where you are! I am going for RNY on June 27...now getting very nervous so trying not to read too many posts on dificulties as I am hoping to avoid them :)
I find this group very supporting / responsive and will be posting more and more and asking for help more and more as I continue on this journey.  Much success to you andlook forward to seeing you on the site / group etc.
Warm regards,
Kathy
