...and the saga continues! probably TMI

So...just when I was saying thank goodness I'm out of the hospital and doing better MS-wise, I'm now down with what seems to be the necessary urinary tract infection that appears to be a MUST after each visit to the hospital. I didn't realize what it was at first, because I had no pain, thought it was the usual MS- related incontinence issues to the nth degree. After 3 nights of sleeplessness (running to the bathroom every half hour), however, the pain started. I'm almost relieved. I started antibiotics today and hopefully things will get better in a couple of days.
In my despondency I overate today. Who brought the potato chips to the house anyway? I feel a little sick to my stomach now and I'm full of regret at my binge. Oh well... back to healthy dieting tomorrow.

Ohhh you poor gal! I JUST had to be treated for a UTI myself. Mine was painfree and I didn't know I had it until i actually hit the point of seeing a tinge of blood in my urine.. Just thought I was suffering from some retention or something. I am much better now, and you will be too in just a few short days! God bless and get better soon. Throw away the chips young lady! lol. Love ya!

((((((Amalia))))))), sending hugs your way.  Glad your issue is explained.  Incontinance is no fun.  You should notice improvement soon.

Do toss the rest of the chips.  Shame on whoever brought them.  I made a dip today of plain greek yogurt and an onion dip mix.  Used this for my red pepper strips.  Dad brought a jimica with him.  Exploring the different food.  Eaten raw, reminds me of fresh pea pods from the garden.  Sweet and crunchy.  Looked it up online, a cup has only 45 calories, no protein though, the dip took care of that.  I will make the dip again for veggies.  Use the greek yogurt as a substitute for sour cream on the package label.

Sounds delicious. What does the onion dip mix contain? We don't have them premade here :(

Do you have access to onion soup mix, ranch dressing mix?  They would both work great, just need to adjust the amounts of the dry ingredients to the greek yogurt.  Let the yogurt and ingredients chill together in the fridge for an hour or so to let the flavors mingle.  You can also experiment with onion powder, paprika, and other seasonings that you enjoy.

Here's the lowdown on jimica. 

Jicama belongs to the legume or bean family (Fabaceae). It is a popular dietary staple in Latin America and widely grown in Mexico and Central America. There are many names for Jicama including: the Mexican potato, Mexican yam bean, ahipa, saa got, Chinese turnip, lo bok, and the Chinese potato.

Jicama looks similar to a turnip or a large radish, and it can be used as an alternative to the water chestnut. Its skin is thin and can be gray, tan, or brown in color. Additionally, it has a short root and contains white flesh. The skin is typically peeled before eating it raw. Raw jicama tastes similar to a pear or apple. It also does not discolor when exposed to the open air for awhile. Because of this, raw jicama is often used as an accompaniment to raw vegetable platters. When jicama is used in cooking it tends to take on the flavors of the ingredients that it is being combined with. Therefore, jicama is a nice complement to various stir-fry dishes because it blends well with many vegetables and seasonings.

Jicama is a very versatile vegetable that contains a high amount of vitamin C, is low in sodium, and has no fat. One adult serving of jicama, which is equal to approximately 1 cup of cubed jicama or 120 grams, also contains only 45 calories.

Jicama is available year-round. When purchasing jicama, select tubers that are firm and have dry roots. Make sure that the jicama has an unblemished skin and that is not bruised. Once purchased, store jicama for up to two weeks in a plastic bag in your refrigerator.

Wow, thanks for the info Kathy! I do have onion soup mix. Of course, jicama is unheard of here, but I guess I could use cucumbers, carrots and peppers to dip into my yogurt. Thanks for a great suggestion!
