Tuesday accomplishments

Wow, I finally took my new years holiday shift last night.  Me time !!!

Slept well, today lounged around this am, did a load of laundry.  When Dennis woke up from sleeping, we went to the gym, walked 60 minutes on the treadmill, then a 20 min swim at the Y.  I am a good kind of tired right now.

Work called while I was gone, looking for extra help for the evening shift.  I did return the call, one of my co-workers already accepted the extra shift.  Good for me !!!!  Now I am making supper and then sleep before my scheduled night shift.

Making mock sheppards pie for supper.  I found a recipe for 'fake' mashed potaties using cauliflower.  Preparing the cauliflower right not.  I will let you know how this turns out.

Dedicating myself to myself, one day at a time.

Sounds like a wonderful day, I am so glad for you..... Let me know how Cauliflower turns out... I have a recipe that calls for it but having a I am not sure about that moment LOL.

The cauliflower did not turn out as I planned.  I ended up making a cream of cauliflower soup, pureed part of the cauliflower in the blender with a small amount of milk.  Added some cheese, garlic and salt/pepper.  Added chopped up beef for protein.  Very good this way.

Sorry to hear the "potaotes" did not turn out, but the soup sounds great! Glad you are back in the swing of taking care of you! KEEP IT UP GIRL!
