Ricotta cheese recipes

I have heard of a ricotta bake with marinara sauce.  Could someone share that recipe with me.  I am still on pureed foods.  Any ideas for ricotta cheese would be appreciated. Just bought a big tub of it.  I love the protein content for such a small amount of it too.

Shelly's Baked Ricotta

8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.

I made this and it is delish !

I made that and both my daughter and I loved it too!  For variety, you can also try the ricotta with Splenda mixed in (to your taste).  Reminds me of a cannoli, and it's great easy-to-eat protein.

ty.  So how are you doing? Hows things since going back to work?  What are you eating? How you sleeping? Getting your vitamins? protein? fluids? 

I'm having trouble with getting everything in.  Got a real early start today though, so maybe that will help...
